  • 1 (8 oz) block cream cheese, softened
  • 1 cup shredded sharp cheddar cheese, divided in half
  • 1 cup shredded pepper jack cheese, divided in half
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons horseradish mustard
  • 1 (4 oz) can diced jalapeños, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Slap Ya Mama Cajun seasoning
  • 1 (15 oz) can sweet corn, drained
  • 1 pound bacon, cooked and crumbled (divided in half)
  • 2 tablespoons sliced green onions (for garnish)

Instructions:

This is just a summary, the full recipe is below!  Preheat your oven to 375°F (190°C). In a large bowl, use a hand mixer to blend the softened cream cheese, cheddar, pepper jack, sour cream, mayonnaise, horseradish mustard, diced jalapeños, garlic powder, onion powder, and Cajun seasoning. Mix until smooth and creamy.

Cheesy Bacon and Corn Dip

With a spoon or spatula, stir in the drained corn and ½ pound of the crumbled bacon until fully combined. Then spread the mixture evenly into a 9-inch pie pan or a 9×9-inch baking dish.

Now top with the remaining ½ cup cheddar and ½ cup pepper jack cheese. Then bake uncovered for about 25 minutes, or until the cheese is melted, golden brown, and bubbly around the edges.

Ingredients

  • 1 Cup Shredded Sharp Cheddar Cheese divided in half
  • 1 Cup Shredded Pepper Jack Cheese divided in half
  • 1/2 Cup Sour Cream
  • 1/4 Cup Mayonnaise
  • 2 tbsp Horseradish Mustard
  • 4 oz Can of Diced Jalapenos
  • 1 tsp each Garlic Powder and Onion Powder
  • 1/2 – 1 tsp Slap Ya Mama Cajun Seasoning (or any cajun seasoning)
  • 15 oz Can of Sweet Corn, drained
  • 1 lb Cooked, Crumbled Bacon divided in half
  • 2 tbsp Sliced Green Onions

Instructions
 

  • Preheat oven to 375°F.
  • In a large bowl, mix cream cheese, shredded cheeses, sour cream, mayo, mustard, jalapeños, and seasonings with a hand mixer.
  • Stir in corn and ½ lb of bacon. Spread into a 9-inch pie pan or 9×9 baking dish.
  • Top with remaining cheese. Bake for 25 minutes or until golden and bubbly.
    Top with remaining bacon and green onions.
  • Serve hot with chips, crackers, pretzels, or veggie sticks!

Notes

• Want extra kick? Add a few dashes of hot sauce or a sprinkle of cayenne pepper.
