It’s ridiculously easy to throw together. We’re talking pantry staples, rotisserie chicken, and a boxed stuffing mix kind of easy. If you’re craving something that gives you all the Thanksgiving vibes without the all-day prep, this one’s for you.

I used to make this all the time when my kids were younger. It was one of those go-to meals that I could throw in the oven while helping with homework or folding laundry. It’s hearty, budget-friendly, and always a hit—even with picky eaters.

Ingredients You Will Need:

  • 1 box chicken-flavored stuffing mix
  • 1 ½ cups low-sodium chicken broth
  • 3 cups cooked, shredded chicken (rotisserie works like a charm)
  • 1 can cream of chicken soup (or cream of mushroom—really, any “cream of” soup works!)
  • 8 oz sour cream
  • 1 tsp herbs de Provence
  • 2 cans of drained green beans
  • 8 oz shredded Colby Jack cheese (Swiss or gouda are also delicious)
  • 4 tbsp unsalted butter, cut into small pieces

What is Herbs De Provence?

Besides being one of my favorite seasoning blends? It’s a fragrant blend of dried herbs like thyme, rosemary, oregano, and sometimes a touch of lavender. It gives this dish a subtle earthy flavor that really amps up the “comfort food” vibe. Don’t have any? You can swap in Italian seasoning or a mix of thyme and rosemary.

Instructions:

First, preheat your oven to 400°F so it’s ready when you are. Meanwhile, in a medium bowl, combine the chicken-flavored stuffing mix with the chicken broth. Give it a good stir, then set it aside so the stuffing can soak up the liquid and soften a bit.

Next, grab a 9×13-inch baking dish. In the dish, mix together the shredded chicken, cream of chicken soup, sour cream, and herbs de Provence. Stir until everything is well combined and smooth. Once that’s mixed, add in the drained green beans and stir again to evenly distribute them throughout the mixture.

After that, sprinkle the shredded Colby Jack cheese evenly over the chicken and veggie mixture. Then, gently spread the softened stuffing mixture over the top of the casserole. Try to cover the entire surface without pressing down too much—you want that stuffing to stay fluffy.

Finally, dot the top of the stuffing with the small pieces of butter. This helps the top get golden brown and just a little bit crispy while it bakes. Place the casserole in the oven and bake for 30 to 35 minutes, or until the top is browned and slightly crispy and the cheese is melted and bubbly around the edges.

Once it’s done, take it out and let it sit for about 5 minutes before serving. This helps everything settle and makes it easier to scoop.

Honestly, this is a full meal in one pan. But if you want something on the side, a simple green salad or some cranberry sauce on the plate makes it feel extra special.

Ingredients
  

  • 6 oz Box of Stuffing Mix any flavor, I used chicken (turkey works great as well!)
  • 1.5 Cups Low Sodium Chicken Broth
  • 3 Cups Cooked, Shredded Chicken rotisserie works great
  • 10.5 oz Can of Cream of Chicken Soup or any "cream of" soup
  • 8 oz Sour Cream
  • 1 tsp Herbs De Provence or substitute with 1/2 tsp Italian seasoning
  • 2 (14.5 oz) Cans of Green Beans, drained
  • 8 oz Shredded Cheese I used Colby Jack, but Swiss and Gouda work great too
  • 4 tbsp Unsalted Butter, cut into small pieces

Instructions
 

  • Preheat your oven to 400°F.
  • In a bowl, mix the stuffing mix with the chicken broth and set it aside.
  • In a 9×13 baking dish, mix the shredded chicken, cream of chicken soup, sour cream, and herbs de Provence until it’s nice and creamy.
  • Stir in the drained green beans, then top the whole thing with shredded cheese.
  • Spread the stuffing mixture evenly on top.
  • Dot the top with the pieces of butter.
  • Bake for 30–35 minutes until the stuffing is golden brown and a little crispy. Let rest for about 5-10 minutes before serving.

Notes

Make-Ahead & Freezer Tips:
• Make-ahead: Assemble everything and pop it in the fridge (unbaked) for up to 24 hours. When you’re ready to cook, just bring it to room temp for 15–20 minutes before baking as usual.
• Freezer-friendly: You can freeze the whole assembled (unbaked) casserole tightly wrapped for up to 2 months. Thaw in the fridge overnight, then bake as directed. Or freeze individual portions after baking for easy reheat-and-eat lunches.
Swap It Your Way:
• Veggies: Corn, peas, broccoli, or mixed vegetables all work great. Just use what you’ve got!
