  • Flour tortillas (8 taco-size) – Perfect for rolling and holding all that filling
  • Mozzarella cheese (16 oz total) – Melty, stretchy, and essential for that pizza feel

  • Red onion (diced) – Adds a little bite and depth of flavor
  • Green bell pepper (diced) – Brings color and a slight sweetness

How to Make Pizza Enchiladas

Start by browning your Italian sausage in a large skillet over medium heat, breaking it up as it cooks until it’s fully browned.

Add in your diced red onion, green bell pepper, black olives, and chopped pepperoni. Let everything cook together for a few minutes until the vegetables soften slightly and the flavors come together.

Stir in about ½ cup of pizza sauce along with a sprinkle of Italian seasoning. Give it a good mix, then remove from heat and set aside.

Lay out your tortillas and spoon the sausage mixture evenly into each one. (I used the taco-sized Mission Low Carb Tortillas). Top each with shredded mozzarella cheese, then roll them up and place seam-side down in a greased 9×13-inch baking dish.

Once all the enchiladas are in the dish, pour the remaining pizza sauce over the top and spread it evenly.

Sprinkle the remaining mozzarella cheese over everything, then top with mini pepperonis and a little more Italian seasoning.

Pizza Enchiladas

Bake uncovered at 400°F / 200°C for about 10-12 minutes, or until the cheese is melted, bubbly, and just starting to get lightly golden.

Pizza Enchiladas

Serve warm with ranch dressing for dipping and a sprinkle of grated Parmesan cheese and crushed red pepper flakes if you like a little heat.

Tips for Success

  • Don’t overfill the tortillas or they’ll be harder to roll
  • Freshly shredded mozzarella melts better than pre-shredded
  • Lightly grease your baking dish to prevent sticking
  • Let them rest a few minutes before serving so they hold together
  • Add extra toppings if you want to load them up even more

Serving Suggestions

  • Serve with ranch or extra pizza sauce for dipping
  • Pair with a simple side salad
  • Add garlic bread or breadsticks
  • Perfect for game day or casual family dinners
