A Fun Twist on Taco Night: Mexican Chicken Pizzas Inspired by Taco Bell
If you’re a fan of Taco Bell, you know how delicious their Mexican Pizzas are. Even though, they use beef in theirs, I decided to make my own with chicken. And they did not disappoint! My husband said he could eat these every night! And I believe him because he is an avid taco lover. As we all are in my house. Not only were these delicious, but you get 8 pizzas at a fraction of the price of going to the drive-thru! Plus, it’s a fantastic way to use up a rotisserie chicken! To make the original recipe, you can replace the rotisserie chicken with 2 lbs of ground beef. Just brown the ground beef, drain it and add in 2 oz of taco seasoning and 1 cup of water and let simmer. And for any of you that remember the Quesarito from Taco Bell, I have recreated it and it is another one of our favorites!

Ingredients You Will Need:
- 4 cups rotisserie chicken, shredded
- 1 ounce packet taco seasoning
- 19 ounces red enchilada sauce
- 4 oz can of diced green chilies
- 1/4 cup sour cream
- 16 oz grated cheese (a mix of sharp cheddar and pepper jack)
- 16 taco-sized flour tortillas
- Vegetable oil (for frying)
- 16 ounces refried beans (canned)
- Diced tomatoes (for garnish)
- Sliced green onions (for garnish)
Instructions:

Put the meat from a rotisserie chicken, about 4 cups, into a large bowl. Mix in a packet of taco seasoning, 1/2 cup of the red enchilada sauce, the can of diced green chilies, 1/4 of sour cream, and a cup of your grated cheese mixture. Stir it all together until everything is well combined and set it aside.




Next, it’s time to fry the tortillas. Heat some vegetable oil in a large skillet over medium-high heat. Fry 16 taco-sized flour tortillas until they are golden brown and crispy. This usually takes about 1-2 minutes per side. Once they are perfectly crispy, drain them on a paper towel-lined plate to absorb any excess oil.



Now, let’s assemble these tasty Mexican chicken pizzas! Start with one tortilla as your base. Spread a generous spoonful of the 16-ounce can of refried beans over the tortilla. Then, take some of that delicious chicken mixture and layer it on top. Don’t forget to sprinkle about a tablespoon of cheese before placing another tortilla on top to create a delicious stack. Pour about three spoonfuls of red enchilada sauce over the top tortilla and sprinkle more cheese on top.





Place them on a baking sheet and pop them into a preheated oven at 400 degrees Fahrenheit. Bake for about 10 minutes, or until the cheese is melted and bubbly. I had to use 2 baking sheets.

Top your Chicken Mexican Pizzas with diced tomatoes and sliced green onions for a fresh crunch. Serve them hot with a side of sour cream and hot sauce for those who like an extra kick.

Ingredients
- 4 Cups Cooked, Shredded Chicken I used a rotisserie chicken
- 1 oz Taco Seasoning
- 19 oz Can of Red Enchilada Sauce, divided
- 4 oz Can of Diced Chilies
- 1/4 Cup Sour Cream
- 8 oz Shredded Sharp Cheddar
- 8 oz Shredded Pepper Jack mix the two cheeses together
- 16 Taco-Sized Flour Tortillas
- 1-2 Cups Vegetable Oil for frying the tortillas
- 16 oz Can of Refried Beans
- 1-2 Tomatoes, diced for garnish
- 3-4 Sliced Green Onions for garnish
Instructions
- Shred the rotisserie chicken and mix with taco seasoning, 1/2 cup of the enchilada sauce, the green chilies, sour cream, and 1 cup of the mixed cheese.
- Heat the oil in a large pan over medium high heat and fry the tortillas until golden brown and crispy. This takes just a minute or two per side. Drain on paper towels.
- Assemble by spreading refried beans on one tortilla, topping with a couple spoonfuls of the chicken mixture, a bit of the cheese, and placing another tortilla on top.
- Spread about 3 tbsp of the enchilada sauce over the top tortilla and sprinkle with more cheese.
- Bake at 400°F for 10 minutes until cheese is melted.
- Garnish with diced tomatoes and green onions.
