I am not ashamed to admit that I really like Taco Bell. However, it is limited to a very few items. And it seems that for whatever reason, they always decide to take those items off the menu! Why??? I loved the Quesarito! It is a burrito filled with rice and taco meat, a spicey sauce and sour cream, then wrapped in a quesadilla with ooey gooey cheese melted in it. Delicious! So naturally, I had to come up with a version to make at home. Honestly, it was even better! And as expensive as eating out is these days, it was much cheaper. How to Make Quesaritos (Taco Bell Copycat)

This is just a summary. The complete, printable recipe is below. To make the rice, I used a box of this Old El Paso Cheesy Mexican Rice. Any rice you like will work just fine! This was delicious and it was a timesaver!

Brown a pound of ground beef. Drain off the grease and add in some taco seasoning and water. Simmer on low.

For the Cheese Sauce

In a sauce pan, add some evaporated milk, velveeta cheese, pepper jack cheese and a can of diced jalapenos. Alternatively, use a jar of premade queso to make it even easier!

In a large skillet over medium heat, add a burrito sized flour tortilla. Spread some sharp cheddar evenly over it. Place another on top and flip. Cook them only long enough for the cheese to melt so they don’t get crispy and hard to roll up.

Bringing It All Together

The order in which you put the fillings does not matter. I used sour cream, Taco Bell brand Spicy Ranchero sauce, the taco meat, the cheese sauce and the rice. Fold it up carefully and enjoy!

Burritos stuffed with taco meat, cheese, rice, sour cream and a spicy sauce, wrapped with a cheesy quesadilla!

Ingredients
  

  • 7.6 oz Box of Old El Paso Cheesy Mexican Rice Or any other kind of rice you like
  • 1 lb Ground Beef
  • 1 oz Taco Seasoning
  • 1/2 Cup Water
  • 8 Count Package of Burrito-Sized Flour Tortillas
  • 8 oz Grated Sharp Cheddar Cheese
  • 6-8 tbsp Sour Cream
  • 6-8 tbsp Taco Bell Brand Spicy Ranchero Sauce

Cheese Sauce

  • 12 oz Evaporated Milk
  • 16 oz Velveeta Cheese
  • 8 oz Grated Pepper Jack Cheese
  • 7 oz Can of Diced Chilies

Instructions
 

  • Make the rice according to the package directions.
  • While the rice cooks, brown the ground beef. Drain the excess grease and add in the taco seasoning and water. Stir and let simmer.

Cheese Sauce

  • To make the cheese sauce, place all of the ingredients into a saucepan and stir over low heat until everything is melted. Allow it to sit for about 10 minutes to thicken up.

Making the Quesaritos

  • In a large skillet over medium heat, place one tortilla and cover it with a layer of cheese. Put another tortilla on top of it and flip. You only want it to cook long enough to melt the cheese. If it gets crispy, it will not be easy to roll. Repeat this step until you have 4 quesadillas.
  • Place the sour cream, the Spicy Ranchero Sauce, the taco meat, cheese sauce and rice on the tortillas. Then carefully roll them up and enjoy!

Notes

This recipe is very customizable. The fillings for these can be anything you like! 
This recipe makes a lot of cheese sauce! We like to use the extra for nachos.
To make it even easier, you could use a jar of store-bought queso.
This recipe makes 4 very large burritos! I  can barely eat half of one. The leftovers are great though. Store in the fridge for up to 3 days or in the freezer for up to 3 months. Reheat in the microwave or air fryer.

    Absolutely phenomenal! So tasty, and pretty easy considering all the components. I even had to make ranchero sauce since my Walmart doesn’t sell it. 10/10 ❤️

    For the cheese sauce, did you mean 10 oz. Evaporated milk? The can size is 12 oz.
