Taco Tater Tot Casserole is one of my family’s favorite varieties of tater tot casserole! Growing up in the Midwest, tater tot casserole was always a staple in our home. And one thing about us Midwesterners, is that we are going to find every way possible to make every kind of casserole! LOL! My family loves anything taco related, so a few years ago, I made this and it became an instant hit! I have adapted the recipe over the years to include a few different things that my picky eaters wouldn’t touch back then. But the concept is still the same. Taco meat, with a few fillers, topped with tons of cheese and of course tater tots! If you have a large oven safe pan, this can all be made in one pan. And it takes less than 20 minutes to prepare. Kids and adults love it. So read on to find out how easy it is to make!

How to Make Taco Tater Tot Casserole
This is just a summary. The full recipe is below. Brown your ground beef with a diced onion. Once it is finished, drain the excess grease. Add in taco seasoning, Rotel and enchilada sauce.
Anything you want to add or not add is fine. This recipe is very customizable. I like to add in corn and black beans. I also add a bit of velveeta to make it creamy. Once you have everything added, stir it well.
Lastly…
Add your cheese on top. I like to use a mixture of sharp cheddar and pepper jack cheese, but use whatever kind of cheese you like! Then top it with the tater tots. Bake it at 400 for approximately 30 minutes.
When it is finished, top it with any additional toppings you might like. I love to add sour cream, lettuce, jalapenos, hot sauce etc. The possibilities are endless!
This is a meal in itself and I do not serve it with anything else. But if you wanted to, I would just suggest a small side salad.

Taco Tater Tot Casserole
Ingredients
- 2 lbs Ground beef Ground Chicken, turkey or sausage etc will work too
- 1 Yellow Onion, Diced
- 2 oz Taco Seasoning
- 10 oz Can of Rotel
- 10 oz Can of Red Enchilada Sauce
- 15 oz Can of Black Beans
- 1 Cup Corn, frozen, fresh or canned
- 4 oz Velveeta Cheese
- 8 oz Shredded Cheese, any variety I used half sharp cheddar and half pepper jack
- 30 oz Bag of Frozen Tater Tots
- Any toppings you might like sour cream, lettuce, jalapanos, hot sauce etc
Instructions
- Preheat the oven to 400 degrees
- In a skillet over medium heat, brown the ground beef with the diced onions. Drain the excess grease.
- Add in the taco seasoning, the Rotel and the enchilada sauce. Give it a mix.
- Stir in the beans, the corn and the velveeta and mix until the cheese is melted.
- Top with the shredded cheese and then the tater tots. Bake for about 30 minutes or until the tater tots are nice and crispy!
- Serve with any toppings you like and enjoy!
