Taco Potato Bowls

In my home, we eat A LOT of “taco” inspired meals! These Taco Potato Bowls are one of my personal favorites! The base of this recipe is the potatoes, the meat and the cheese sauce. Then you can get as creative as you want with the toppings! On the day I made these, I kept it simple with just some tomatoes, jalapenos and sour cream. Some other great options would be guacamole, salsa, lettuce, onions, black olives, refried beans and so many more! My daughter likes to stuff all of this into tortillas! This is not a ground-breaking recipe by any means. But sometimes we just need ideas for easy meals and this is a great one here! How To Make Taco Potato Bowls

Start by chopping up your potatoes. These will be cooking while you prepare everything else. So this is why you need to start them first. And if you need a terrific dicer/chopper, I love this one from Amazon! I have had it for 3 years and use it almost daily!

Once you have them chopped, put them in a large bowl and drizzle with oil and seasoning and mix well. Put them in the air fryer at 400 for about 20-25 minutes or in the oven at 400 for 25-30 minutes.

While the potatoes cook, brown some ground beef (or any kind of ground meat you like.) To get the meat really fine and crumbly, I like to use a potato masher as it cooks.) Add your taco seasoning with some water. Stir it up and let it simmer on low while you make the cheese sauce.

For the cheese sauce, mix together evaporated milk, velveeta cheese, grated pepper jack cheese and a can of diced chilies. Stir that over low heat until the cheese is completely melted.

By this time, the potatoes should be done and all you have left to do is assemble your bowls! As I said above, a variety of toppings can be used. You can also use this as a filling for tortillas.

Ingredients
  

Potatoes

  • 2 lbs Potatoes, chopped into bite-sized pieces I used yukon golds but any variety is fine
  • 1-2 tbsp Olive Oil
  • 1-2 tbsp Kinders The Blend seasoning or use garlic powder, onion powder and salt and pepper
  • 1-2 tsps Smoked Paprika

Taco Meat

  • 2 lbs Ground Beef chicken, turkey, or any other type of ground meat is fine
  • 2 oz Taco Seasoning
  • 1 Cup Water

Cheese Sauce

  • 12 oz Can of Evaporated Milk
  • 12 oz Velveeta Cheese
  • 8 oz Grated Pepper Jack Cheese
  • 4 oz Can of diced Chilies

Any Variety Of Toppings That You Like

    Potatoes

    • After chopping your potatoes, place them in a large bowl, Drizzle with the oil and seasonings and mix well.
    • Cook them in the air fryer at 400 degrees for approximately 20-25 minutes. If you do not have an air fryer, cook them in the oven at 400 degrees for approximately 25-30 minutes. Be sure to toss them about halfway through cooking, regardless of which method you use.

    Taco Meat

    • Brown the ground beef in a skillet over medium heat. Drain the grease then add your taco seasoning and water. Let it simmer over low heat for 5-10 minutes.

    Cheese Sauce

    • Place all of the ingredients in a medium saucepan. Mix over low/medium heat, stirring continuously until all of the cheese is melted.
    • To assemble the bowls, place some potatoes on a plate, followed by the meat then the cheese sauce and any toppings you like. Enjoy!
