Loaded Smothered Breakfast Burritos

If you need a delicious and hearty breakfast to feed a crowd, you need to make these Loaded Smothered Breakfast Burritos! They have all your favorite breakfast foods packed into one dish. And everyone who tries them absolutely loves them. The burritos are filled with potatoes, bacon, eggs and cheese and rolled up. Then topped with the best sausage gravy and more cheese! (And you can obviously fill them with anything else you like too!). I promise these will be requested often after you make them!

How to Make Loaded Smothered Breakfast Burritos

Start by making the potatoes. Chop them into bite-sized pieces. Drizzle with a bit of oil then season how you like. I love to use Kinders the Blend and paprika. Put them in the air fryer for about 25 minutes or the oven for about 35. You can also fry them in a skillet. You can also use frozen potatoes!

Cook your bacon. My favorite way to do this is in the oven. I place parchment paper on a cookie sheet, then lay the bacon out. I bake it at 400 degrees for approximately 20 minutes. Then lay it out on a paper towel lined plate. Once it is cooled, give it a rough chop.

You could also buy premade gravy to make this a lot easier!

Mix together 8 eggs with 1/4 cup of heavy cream and the seasoning of your choice. I used some creole seasoning. Cook them in a tbsp of butter over medium heat just until soft and fluffy. Be careful not to overcook them.

Putting it all together

Let everything cool slightly then in a large bowl, mix the potatoes, eggs, bacon and cheese. Roll into 9-10 flour tortillas and place them in a 9×13 or larger baking dish. Top with the sausage gravy and cheese. Bake at 375 for 10-15 minutes or until the cheese is melted and they are heated through.

Loaded Smothered Breakfast Burritos

These breakfast burritos are filled with bacon, egg, potatoes and cheese, then topped with sausage gravy and more cheese for a very hearty breakfast!

Ingredients
  

  • 1 lb Russet Potatoes, chopped into bite-sized pieces
  • 1 tbsp Olive Oil
  • 1-2 tbsp Kinders the Blend seasoning or any seasoning you like
  • 1 tsp Paprika
  • 8-10 Slices Bacon, cooked and chopped
  • 8 Eggs
  • 1/4 Cup Heavy Cream
  • 1-2 tsp Creole Seasoning or whatever seasoning you like
  • 1 lb Breakfast Sausage
  • 4 tbsp Butter
  • 1/3 Cup All Purpose Flour
  • 2.5-3 Cups Whole Milk
  • 1-2 tsp Salt and Pepper to taste
  • 10 Count Flour Tortillas
  • 3-4 Cups Grated Colby Jack Cheese

Instructions
 

  • In a large bowl, drizzle the potatoes with oil and season with the Kinders and paprika or whatever seasoning you want to use. Air fry at 400 for approximately 25 minutes or until crisp and tender. Or bake at 400 for approximately 35 minutes. You can also pan fry these!
  • Cook your bacon however you like. Once it is finished, give it a rough chop.
  • While the bacon and potatoes are cooking, prepare the sausage gravy. Brown your sausage in a skillet over medium heat. Once it is fully cooked add in the butter and melt it down. Stir in the flour a little bit at a time, stirring constantly. Once you have it all added in, cook for about 5 minutes to get the raw flour taste cooked out. Bring the heat to low/medium. Now slowly pour in the milk, stirring constantly. Keep stirring until it comes to a boil then remove it from the heat. This is when it is going to get thick. Season with salt and pepper to taste.
  • Mix together the eggs with the heavy cream and creole seasoning. Cook in the butter in a skillet over medium heat just until light and fluffy. Be careful not to overcook them.
  • Once you have everything prepared, let it all cool slightly. Mix together the potatoes, eggs, bacon and 1 cup of the cheese.
  • Roll the mixture into the tortillas and place them in a 9×13 or larger baking dish.
  • Top with the gravy and the remaining cheese. Bake at 375 for about 10-15 minutes or until the cheese is melted and everything is heated through.
  • Serve hot and enjoy!
