When I say I need something easy AND delicious for dinner, this Mongolian Ground Beef and Noodles is what often comes to mind! From start to finish, it only takes about 20 minutes. And even when my youngest was little, (he was extremely picky!), he loved this dish. So it has been a staple in our home for many years! And I am guessing you may have most of the ingredients on hand. Most of them are staple pantry items, and if you don’t have a few, there are modifications you can make. What is not to love?

What Do You Need to Make Mongolian Ground Beef and Noodles?
You are going to need:
- Ground Beef (ground chicken, turkey or pork work great too!)
- Minced Garlic (I recommend using fresh, but garlic powder also works!)
- Ginger Paste (dried ground ginger works just as well)
- Soy Sauce
- Brown Sugar
- Red Pepper Flakes (optional, use only if you want a bit of spiciness)
- Hoisin Sauce (the only substitution that comes to mind for this would be BBQ sauce)
- Black Pepper
- Cornstarch
- Linguini (other long pastas, such as fettucine or spaghetti also work great!)
- Sliced green onions and sesame seeds (optional as a garnish)
How to Make Mongolian Ground Beef and Noodles
Start by getting your pasta cooking in some salted boiling water. Cook to al dente per the instructions on the box. Be sure to reserve 2 cups of the water before draining them.
Brown the ground beef with the minced garlic and drain off any excess grease when it is finished cooking.
Stir in the ginger, the brown sugar, the soy sauce, red pepper flakes, hoisin sauce and black pepper.
Then you will add in a cornstarch slurry.
And then stir in 1.5 cups of the pasta water and the cooked noodles.
Stir together until everything is well incorporated. Season with salt and pepper to taste if needed.
Garnish with sliced green onions and sesame seeds if desired. Serve hot and enjoy!
I like to serve this with some garlic bread and a dinner salad, but it is definitely hearty enough to be served on its own. I also like to add different veggies in sometimes too. Broccoli and zucchini and red bell peppers are my favorite ones to use.

Mongolian Ground Beef and Noodles
Ingredients
- 1 lb Ground Beef Ground turkey, chicken or pork will also work
- 12 oz Linguine Pasta Spaghetti or Fettuccine also work great
- 2 cups Pasta Water, reserved from cooking the pasta in
- 4-5 Garlic Cloves, minced
- 1 tsp Ginger Paste or 1 teaspoon dried ginger
- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar
- 1 pinch Red pepper flakes optional, use only for a slight hint of spice
- 3 tbsp Hoisin Sauce I have never used anything for a substitute but a quick google search says BBQ is good as a substitute
- 1/2 tsp Ground Black pepper
- 1 tbsp Cornstarch
- 2 tbsp Cold Water
- 2-3 Green Onions, sliced optional as garnish
- 1-2 tsp Sesame Seeds optional as garnish
Instructions
- Start cooking your pasta in some salted boiling water. Cook to al dente according to the directions on the package. Reserve 2 cups of the water before draining them.
- In a skillet over medium heat, brown the ground beef with the minced garlic. Drain excess grease if needed.
- Stir in the ginger, soy sauce, brown sugar, red pepper flakes, hoisin sauce and black pepper.
- Mix the water and cornstarch together. Stir it into the meat and allow it to simmer for a couple of minutes to thicken up.
- Stir in 1 cup of the pasta water and the cooked and drained pasta. Stir really well until everything is incorporated and the sauce sticks to the pasta. (Last time I made this I ended up using another 1/2 cup of the pasta water. It will depend on how thick you want it to be.)
- Garnish with the sliced green onions and sesame seeds if desired. Serve hot and enjoy!
