Chicken Spaghetti in the Slow Cooker

Chicken Spaghetti is a wonderfully creamy dish made with very simple ingredients that even the pickiest of eaters will love! And the great thing about this recipe is that the slow cooker does most of the work! When I say most, I mean all you have to do is boil the spaghetti at the end. So easy! And so tasty! This is a dish that has been around for a long time and there are tons of different recipes for it. I think the versatility and ability to customize it is part of what makes it so great! It is also freezer friendly, which is great for when you want to make a big batch and have leftovers for a lazy day! I also have a baked version that you can find here!

A lot of people tend to put away their slow cookers in the warmer months. But if you have kids that play sports or are just really busy in general, the slow cooker is great all year round! Plus, it saves you from having to heat up the kitchen! And it is also great for taking hot dishes to cookouts!

What is in it?

  • 1.5 lbs boneless skinless chicken breasts or thighs. By now, most of you know that I am a thigh girl but I think that breasts work better in this recipe, but either one will do
  • 1 tbs Ranch dressing seasoning mix
  • 2 cans of Cream of Chicken Soup
  • 1 Can of Rotel
  • 5-6 minced garlic cloves
  • 2 cups of milk
  • 8 oz Sharp Cheddar
  • 8 oz Gouda
  • 1 lb cooked Spaghetti

Can different soups and cheeses be used?

Yes, absolutely! Like I said above, this recipe is extremely customizable! Feel free to use any type of cream soup and cheeses you like! It will still turn out great!

How do you store leftovers?

You can store the leftovers in an airtight container in the fridge for up to 3 days or the freezer for up to 3 months. (The consistency of the sauce may change after freezing but I find that if you reheat it on the stove, adding a little milk while stirring can help.)

How to make it

You will start by adding your chicken to the bottom of the slow cooker and season it with the Ranch dressing mix. then you will add the soup, the Rotel and the garlic. Carefully mix and spread that evenly over the chicken.

Cook on high for 3-4 hours or low for 4-6. *Always keep in mind that cooking times will vary based on your appliance!

When it is finished, remove the chicken and dice it up. You can also shred it if you like, but I prefer it to be in chunks for this recipe. Set it aside.

You will want to have your spaghetti cooking at this point!

Now, add in the milk and the cheeses and mix them up really well until all of the cheese is melted. Add in your cooked and drained spaghetti and the cut up chicken. Give it another good mix until everything is well combined. You can add salt and pepper to taste, but I find that it is salty enough. But if you prefer more, feel free to add it!

This is great served with a nice salad or green veggie, or garlic bread. But I will be honest, my favorite way to serve it is with a slice of buttered white bread because I love spaghetti sandwiches! This is the way we did it as kids and it is also the way my kids enjoy it! If you have never tried it, you should!

Ingredients
  

  • 1.5 lbs Boneless, skinless chicken breasts or thighs

  • 2 10.5 oz Cans of Cream of Chicken Soup
  • 10 oz Can of Rotel
  • 5-6 Garlic Cloves, minced
  • 2 Cups Milk
  • 8 oz Sharp Cheddar Cheese, freshly grated
  • 8 oz Gouda Cheese, freshly grated
  • 1 lb Spaghetti
  • Salt to taste if needed

Instructions
 

  • Add your chicken to the bottom of the slow cooker and sprinkle the ranch seasoning on top of it.
  • Add the soup, rotel and minced garlic. Carefully mix that and spread evenly over the chicken.
  • Cook on high for 3-4 hours or low for 4-6.
  • When it is finished, remove the chicken and dice it up. Or if you prefer, you can shred it up also. Set it aside.
  • Prepare the spaghetti according to the package directions
  • To the slow cooker, add the milk and cheeses and stir until all of the cheese is melted.
  • Add in the cooked and drained spaghetti and the cut up chicken. Mix well until all of the ingredients are well incorporated. Salt to taste if needed. Serve hot and enjoy!
