Chicken and Gravy (Slow Cooker)

This Chicken and Gravy in the Slow Cooker was a CONSTANT go-to meal when I was a single mom and my kids were young. They were all involved in sports and I didn’t always want to hit the drive-thru, even though we did a lot. Finding inexpensive and easy slow cooker meals like this one was always on my mind. This Chicken and Gravy recipe requires just a few very simple ingredients. It has always been a kid pleaser! Serve it over rice, mashed potatoes, biscuits or whatever you like! This may not be the prettiest looking meal, but it sure is delicious!

Can this be made without a slow cooker?

Yes! It absolutely can! The gravy mix, water and soups can be combined on the stove. Then you would just add cooked chicken to it. You could boil and shred the chicken, saute it, or go the super easy route and get a rotisserie chicken.

Can it be frozen?

This dish freezes well. Put it in a freezer safe baggie, get as much air out as possible and be sure to label and date it. Store it in the freezer for up to 3 months. When ready to eat, just thaw and reheat on the stove top or microwave.

To make the Chicken and Gravy in the slow cooker, you will start by mixing 2 cans of Cream of Chicken Soup. I prefer the one with Herbs as it has a bit more flavor, but regular works just as well.

You will mix that with 2 packets of gravy mix and 2 cans filled with water or low sodium chicken broth.

Now you will add in 2 lbs of boneless, skinless chicken breasts or thighs. I used thighs for this batch but both work great! Once you have them in there, give them a gentle push to make sure they are covered by the liquid.

Cook on low for 4-6 hours or high for 2-3. When it is done, shred the chicken. Sprinkle with a little parsley for color if desired and season with salt and pepper if needed.

I almost always serve this over mashed potatoes, which I have a great recipe for here: (Creamy Garlic Mashed Potatoes), but as I mentioned, it is really good over rice or biscuits or even buttered bread. You can add some veggies in it or on the side. Ours have to be on the side or my picky kids won’t eat it!

This recipe is also a good base for dumplings! Using a can of refrigerated biscuits, roll the dough out flat and cut into strips. Stir into the mix for the last 30-45 minutes, until the dough is cooked and it is that simple!

Slow Cooker Chicken and Gravy

Equipment

  • 1 Slow Cooker at least 3.5 quarts in size

Ingredients
  

  • 2 10.5 oz Cans of Cream of Chicken Soup with herbs
  • 2 1 oz Packets of Chicken Gravy Mix
  • 2 Cans of water or low sodium chicken broth
  • 2 lbs Boneless Skinless Chicken thighs or breasts
  • Garlic Powder, Onion Powder and Black Pepper to season the chicken

Instructions
 

  • In the slow cooker, mix together the soup, the gravy packets and the water.
  • Add in the seasoned chicken, making sure it is covered by the liquid.
  • Cook on low for 4-6 hours or high for 2-3. Shred the chicken when it is finished and garnish with dried parsley if desired.
