Do not let the simplicity of this dish fool you. This crockpot chicken with potatoes and green beans is loaded with flavor and the chicken always comes out so tender and juicy! I started making this several years ago and it is in my crockpot probably twice a month at least! I love a dish that you can just toss everything in and not have to worry about it for the rest of the day! I will usually pop open a can of biscuits to serve with this, and just like that, you have a healthy, delicious meal for your family! If you like this recipe, check out the oven version here: Sheet Pan Chicken with Potatoes and Green Beans
How to Make It
Spray your crockpot with cooking spray or use a liner. Place 2.5 lbs boneless skinless chicken breasts or thighs on the bottom.
Sprinkle one packet of Lipton Onion Soup mix on top of the chicken.
Then top it with one sliced onion.
Add in 2.5 lbs of chopped up potatoes. I prefer yukon gold but any variety will work.
Add in 1 lb of fresh washed green beans. You could also use 4 cans of beans, but I would not add them until maybe the last hour so that they don’t get mushy.
Sprinkle another packet of Lipton Onion Soup mix on top of that.
Drizzle 1/2 stick of melted butter over the top.
Place the lid on and cook on low for 6-8 hours or high for 4-6 hours.
This dish goes great with some canned biscuits or garlic bread or even a side salad!
