This Sheet Pan Chicken with Potatoes and Green Beans is one of our absolute favorites! Not only is it super delicious, but it requires very minimal prep and just a few simple ingredients and you only have to dirty one dish! I have a crockpot version of this as well, and you can find that here Crockpot Chicken with Potatoes and Green Beans. Another great thing about this is that you can use any variety of seasonings and you can also use whatever vegetables you like! I will sometimes use sweet potatoes and broccoli, which is really good too! So feel free to put your own spin on this.
On a large sheet pan, place 1.5 lbs of boneless skinless chicken thighs or breasts, 2 lbs of baby yukon gold potatoes, quartered, and 1 lb of fresh washed and snipped green beans.
Season the chicken with this Good Seasons Garlic and herb dressing mix. Make sure to season both sides.
Use a packet of onion soup mix to season the potatoes and green beans.
Melt 1 stick of butter and pour over the entire thing.
Cover tightly with foil and bake at 400 degrees for 1 hour. Do not stir or uncover at all while it is cooking.
After 1 hour, you have juicy, tender chicken, and some tasty veggies for a healthy balanced meal!
I like to make a can of biscuits to serve with it.
