Healthy Cabbage Soup with Ground Beef: A Delicious Reset After the Holidays
As we step into January 2025, many of us find ourselves reflecting on our holiday indulgences. The last few weeks of 2024 may have been filled with festive treats and hearty meals, leaving us in search of a lighter, healthier option to kickstart our new year. Enter my hearty and wholesome cabbage soup with ground beef! This soup is not only a comforting dish, perfect for winter, but it’s also packed with protein, an abundance of vegetables, and tons of fiber, making it an ideal choice for anyone looking to get back on track with their healthy eating goals. Creamy Italian Sausage and Gnocchi Soup
Creamy Chicken and Wild Rice Soup

Ingredients:
- 1 pound ground beef
- 1 small diced green pepper
- 1 small diced yellow onion
- 2 sliced carrots
- 2 sliced ribs of celery
- Salt-free garlic and herb seasoning (about 2 tablespoons)
- Slap Your Mama seasoning (about 1 teaspoon)
- Black pepper (to taste)
- 2 tablespoons tomato paste
- 2 medium russet potatoes, peeled and chopped into bite-sized pieces
- 2 cans (14.5 ounces each) diced tomatoes (I used Hunt’s with basil, garlic, and oregano)
- 4 minced garlic cloves
- 1 whole head of green cabbage, chopped
- 1 heaping tablespoon of Knorr beef bouillon (or beef broth/chicken broth as an alternative)
- 4 cups of water
Directions:

This is just a summary, the full recipe is below. Start by heating a Dutch oven over medium heat. Add the ground beef and cook until it’s nicely browned. Toss in the diced green pepper, yellow onion, sliced carrots, and celery. Season with salt-free garlic and herb seasoning, Slap Your Mama seasoning, and black pepper. Sauté until the vegetables begin to soften.




Mix in the tomato paste and let it cook for a couple of minutes, stirring occasionally. Stir in the Potatoes. Add the chopped russet potatoes to the pot and give everything a good stir. Pour in the cans of diced tomatoes and add the minced garlic cloves. Stir until everything is well combined.




Next, add the chopped green cabbage. It may seem like it won’t fit, but don’t worry—cabbage reduces significantly as it cooks. Stir in batches if needed. Add the Knorr beef bouillon and pour in the water. If you prefer, feel free to substitute with beef or chicken broth for extra flavor. Stir until everything is well mixed, then bring the mixture to a boil. Once boiling, lower the heat, cover the pot, and let it simmer for about 30 minutes until the potatoes and cabbage are tender.





After simmering, taste the soup and add salt and pepper as desired.

- 1 Small Diced Yellow Onion

- 2 Sliced Ribs of Celery
- 2 tbsp Garlic and Herb Seasoning
- 1 tsp Slap Ya Mama Seasoning or any cajun seasoning (or just omit for less heat)
- 2 tbsp Tomato Paste
- 2 Medium Russet Potatoes, peeled and chopped into bite-sized pieces
- 2 14.5 oz Cans of diced tomatoes I used Hunt's with basil, garlic and oregano
- 4 Garlic Cloves, minced
- 1 Whole Head of Green Cabbage, chopped
- 1 1 heaping tablespoon of Knorr beef bouillon + 4 cups of water or 4 cups of beef/chicken broth
- Salt and Pepper to taste
