Ingredients
  

  • 1 lb Ground Beef or any kind of ground meat that you prefer
  • 1 Yellow Onion, Diced
  • 4-5 Garlic Cloves, minced
  • 2 tbsp Taco Seasoning
  • 19 oz Can of Red Enchilada Sauce
  • 15 oz Can of Black Beans, rinsed and drained
  • 15 oz Can of Chili Beans in Chili Sauce
  • 15 oz Can of Fire Roasted Diced Tomatoes
  • 15 oz Can of Corn, drained
  • 4 oz Can of Diced Chilies
  • 1 Cup Beef Broth
  • Any toppings you like such as sour cream, cilantro, cheese, tortilla strips, etc

Instructions
 

  • Brown the ground beef with the diced onions and garlic in a skillet over medium heat. When the meat is fully cooked, drain the excess grease and transfer it to the crockpot.
  • Add in the rest of the ingredients except for the toppings.
  • Cook on low for 4-5 hours or on high for 3-4.
  • If you want to do this on the stove top, just put everything in a large pot and let it simmer for at least 30 minutes.
  • Season to taste if needed. Serve hot with any of the toppings you like and enjoy!
