- 1 pound shelf-stable potato gnocchi
- 2 cups baby spinach, chopped
- 2 cups heavy cream
- 3 ounces fresh Parmesan cheese, shredded

In a large Dutch oven over medium heat, cook the Italian sausage, carrots, celery, and onion. Stir frequently until the sausage is browned, and the vegetables are tender, about 7 minutes. Add the minced garlic and chopped sun-dried tomatoes, making sure to drain the oil off the tomatoes first. Stir everything well to release the garlic’s aroma and add a boost of flavor.


Sprinkle in 1 teaspoon of herbs de Provence for a touch of earthy, aromatic goodness. If you can’t find this, use Italian Seasoning. Add 2 cups of chicken broth and the gnocchi, then bring everything to a boil. Let it boil for about 2 minutes to allow the gnocchi to start cooking.




Reduce the heat and stir in the chopped baby spinach and heavy cream. These add beautiful color and richness to the soup.


Lastly

Shred fresh Parmesan cheese directly into the soup and stir to combine. Let the soup simmer on low for about 30 minutes, thickening to your desired consistency. Taste and adjust with salt and pepper if needed.

Great soup! I used 4 cups of broth because my household likes it soupy but it still came out nice and creamy. Plus I didn’t have to add anything when reheating. My wife says I will definitely need to put this recipe into rotation.

So good!!! I used shredded carrots because I don’t like chunked, cooked carrots and it still added the flavor needed. I also didn’t add the celery. I put maybe a half a cup more of stock. This is so good. Like totally going to be a staple in the household! And easy!
