This Butterscotch Lush Dessert was a staple dessert at all of our family gatherings when I was growing up. Along with many others because my grandmother was a beast in the kitchen! Lol. But seriously she was! This was probably one of my favorites, but it would be really difficult to actually pick a favorite. However, I have made this several times over the years, and every time I make it, it is a huge hit wherever I take it. People will gobble it up and always want the recipe! It is perfect for any kind of gathering!

And since it is cookout season, here are some other dishes that are perfect for cookouts!

What is Butterscotch Lush?

It is a decadent dessert of several layers. The first is a crunchy layer made with crushed up pecan sandies. The second layer is a sweet cream cheese mixture and the third layer is made with butterscotch pudding. The final layer is a whipped topping and it gets sprinkled with crushed pecans. It is not overly sweet. And is the perfect balance of sweet and salty. One of my absolute favorite combinations! I am not much of a sweets person, thus why I do not have many desserts recipes on here. But I promise I will try to do more! If you like this one, I know that I can reach down into my grandma’s recipe box and bring you many many more!

Ingredients for Butterscotch Lush

  • 1 package of Keebler pecan sandies
  • 1/2 cup of flour
  • 1 stick of salted butter
  • 12 oz of cream cheese
  • 1.5 cups of confectioners sugar
  • 1 tub of Cool Whip
  • (2) 3.4 oz boxes of Butterscotch Instant pudding mix
  • 3.5 cups of milk
  • 6 oz of crushed pecan pieces

This dessert can easily be changed up just by using different flavors of pudding, different toppings, and even different kinds of crusts!

Start by crushing up the pecan sandies. This is can be done with a food processor. But you can also put them in a large ziploc bag and crush them with a rolling pin or anything heavy.

Transfer them to a mixing bowl and mix with the flour and melted butter. Then spread into a 9×13 baking dish and bake at 325 degrees for 10 minutes. This will allow the crust to set.

For the cream cheese layer, you will mix together the cream cheese with the powdered sugar and a cup of the cool whip. You may need to scrape the sides if you are using a stand mixer.

Now you will make the pudding layer by mixing the pudding mix with the milk. Beat it until it is nice and thick!

By this time the crust should be cooled. So spread the cream cheese mixture on top of it, then the pudding, then the rest of the cool whip. Sprinkle the crushed pecans on top and that is all there is to it!

It does need to chill in the fridge for at least an hour before serving.

*And a tip to make cutting it easier is to run a knife under hot water for a minute or so!

As I mentioned above, there are so many variations and combinations of this dessert! A few that I would suggest is using Oreos as the crust with chocolate pudding and crushed Oreos as the topping. Another would be S’mores pudding with a graham cracker crust and chocolate shavings as a topping! There are countless ways to switch this up! But I strongly recommend you try this one first!

Ingredients
  

  • 11.3 oz Package of Keebler's Pecan Sandies
  • 8 tbs Salted Butter, melted
  • 1/2 Cup All Purpose Flour
  • 12 oz Cream Cheese, softened
  • 1.5 Cups Confectioner's Sugar
  • 8 oz Cool Whip (Whipped Topping) Divided
  • 2 3.4 oz Boxes of Butterscotch Instant Pudding Mix BE SURE TO USE INSTANT AND NOT THE KIND YOU HAVE TO COOK!
  • 3.5 Cups Milk
  • 6 oz Crushed Pecans

Instructions
 

  • Preheat oven to 325 degrees
  • Finely crush the cookies. Transfer them to a mixing bowl and combine with the melted butter and flour.
  • Press into the bottom of a 9×13 baking dish and bake for 10 minutes.
  • Using a stand mixer or hand mixer, beat the cream cheese with the confectioner's sugar, then add in 1 cup of the Cool Whip. Set aside.
  • Using a stand mixer or hand mixer, beat the pudding and milk until it is nice and thick.
  • Spread the cream cheese mixture onto the cooled crust, followed by the pudding and then the remainder of the Cool Whip.
  • Sprinkle the crushed pecans on top and refrigerate for at least one hour.

    Oh my are you also using your grandmas Pyrex Cinderella bowl? What pattern is that?
    I hope my grandchildren honor me as you are her! I love that recipe , too ❤️❤️

      I am! Unfortunately, the pattern is almost completely worn off but I still cherish it very much! This bowl and one of her cast iron skillets were the 2 things I really wanted after she passed away and every time I use them I am flooded with fond memories of her! I am sure your grandchildren will carry your love with them forever as well! Grandma’s really are the best!

        You didn’t say which pattern is on the bowl… I had no idea they were called “Cinderella” bowls! How cute, I love it! Unfortunately, I don’t have any of those, I don’t recall my Grandma having / using Pyrex bowls like that. She had some very cool crockery though, although I wasn’t lucky enough to get any of it, my Aunts are a bunch of hoarders and sneaky little (actually VERY LARGE) thieves, they took pretty much everything. It was so hurtful, as my Mom, Sister and I were the ones to care for her for almost 10 YEARS prior to her passing. I did get a very small rectangle Pyrex dish, the casserole type dish you’re using but much smaller, it was perfect for making meals for two. Unfortunately, my hubby broke it one day, I wouldn’t have been so upset , however, he showed no remorse whatsoever, it meant nothing to him that it was special to me because it WAS MY GRANDMAS. I got over it (I guess, it sounds like I still have some animosity about it and that was probably 8~10 years ago…) I also have her VERY OLD Flour Sifter of hers, I just used it actually, I love it and it makes my heart happy!

        I realize I may sound bitter, that’s really NOT ME though, when it comes to having something that goes against my Grandma I guess it just brings out the “not so best of me”…

        I do want you to know that I’m so in love with some of your recipes, Arroz Con Pollo is on the menu, it sounds and looks just delectable!!
