Sunshine Broccoli Supreme Salad

This Sunshine Broccoli Supreme Salad is one of my absolute favorite side dishes for summertime cookouts! It is made with fresh broccoli florets, raisins, sunflower seeds, diced red onion and crispy salty bacon. Then it is coated with a sweet creamy dressing and it is heavenly! The contrast of sweet and salty flavors is an explosion of flavor that one must try to truly understand just how irresistible it is! Not only is it perfect for parties, but as a side dish at home for any meal. And it is extremely simple to throw together! I recommend doubling the recipe for parties because it goes fast!!!!

Ingredients:

  • 1 lb of fresh broccoli, chopped into bite-sized pieces
  • 1/2 lb of cooked and crumbled bacon
  • 1/2 cup diced red onion
  • 3/4 cup of raisins
  • 1/2 cup of salted sunflower kernels
  • 1 Cup of mayonaisse
  • 1/2 cup of sugar
  • 2 tbs of white vinegar

The dressing is light and refreshing without being overly sweet! If you prefer, you can substitute Miracle Whip and cut the sugar down to a 1/4 cup. I don’t recommend using Greek yogurt or sour cream as it will give it a bit of a sour tang that just doesn’t go well with the ingredients in this dish.

Can it be made ahead and frozen?

This dish needs to be made at least 30 minutes prior to serving! In fact, the most important step is letting it chill in the fridge for at least 30 minutes after preparing it to allow all of the flavors to meld together. It can be made up to 2 days in advance.

I do not recommend freezing it though. It will become very water and the broccoli will turn to mush.

How to Make it:

In a large bowl, you will whisk together the mayo, sugar and vinegar. Then you will simply add the rest of the ingredients in and stir it up really well!

Feel free to omit any ingredient that you don’t like. Some recipes call for cheddar cheese. You would add about 1 cup. I do not like it that way, but if you want it, add it! I won’t steal your sunshine!

After preparing the salad it is very important to let it chill in the fridge for AT LEAST 30 minutes! This will allow the flavors to really allow the flavors to combine!

A light and delicious salad filled with broccoli, bacon, red onions, sunflower seeds, and raisins in a sweet creamy dressing!

Ingredients
  

  • 1 Cup Mayonnaise
  • 1/2 Cup White Sugar
  • 2 tbs White Vinegar
  • 1 lb Fresh Broccoli, chopped into bite-sized pieces
  • 3/4 Cup Raisins
  • 1/2 Cup Salted Sunflower Kernels
  • 1/2 lb Cooked Crumbled Bacon
  • 1/2 Cup Diced Red Onion

Instructions
 

  • In a large bowl, whisk together the mayonnaise, sugar and vinegar.
  • Add in the rest of the ingredients and mix very well!
  • Cover and chill in the fridge for AT LEAST 30 minutes and enjoy!

Notes

This dish can be prepared up to 2 days in advance.
I do not recommend freezing it as it will become very watery and mushy.
