Corn Casserole is a dish that has to make an appearance at EVERY SINGLE ONE of our family gatherings. It’s even a dish that I make on a regular rotation as a side dish for dinner. My kids would eat it for every meal if I made it for them. It’s not only delicious but extremely easy to make. With just a few simple ingredients, you can have it thrown together and in the oven in about 5 minutes! I’ve tried several variations but this recipe is the one that we love and the only one I will ever use.

Green Bean Casserole with Bacon and Smoked Gouda
Ingredients:
- 1 can of drained corn
- 1 can of cream style corn
- 1 egg
- 4 tbs of melted butter
- 1 cup of sour cream
- 8 oz of grated cheddar cheese
- 1 box of Jiffy Corn Muffin Mix
Can it be assembled ahead of time?
You can assemble this up to one day ahead of time. Just throw it together and keep it wrapped tightly in the fridge until ready to bake. You may need to add a few minutes of baking time if you do this.
Can it be frozen?
Yes. This dish freezes well. Bake it according to the directions, allow it to cool and wrap tightly with plastic wrap and aluminum foil or vacuum seal it. Freeze for up to 3 months. When ready to eat, let it thaw and reheat individual portions in the microwave.
How do you make it?
In a large bowl, you will mix all of the ingredients together.
Once you have it all mixed together, you will bake it in a 375 degree oven for approximately 45 minutes or until baked through.
And that is quite simply all there is to it!
What do you serve it with?
This corn casserole goes well with almost anything! As I said, it is a staple for all of our holiday/birthday/social gatherings. Tonight I served it with some teriyaki chicken and some French onion potatoes. I will have those recipes posted soon and will update here when I do so that you can find the links!
Corn Casserole
Ingredients
- 1 14.75 oz Can of corn, drained
- 1 14.75 oz Can of Cream Style Corn
- 1 Egg
- 4 tbs Salted Butter, melted
- 1 Cup Sour Cream
- 1 Cup Grated Cheddar Cheese
- 1 8.5 oz Box of Jiffy Corn Muffin Mix
Instructions
- Preheat oven to 375 degrees.
- Mix together all ingredients in a large bowl.
- Spread into a greased 9×11 baking dish and bake for approximately 45 minutes or until cooked through.
