Polish Sausage and Sauerkraut

Polish sausage and sauerkraut is one of those dishes that I don’t make very often, but every time I do I wonder why! I think it is mainly because my husband and I are the only ones in the family that will eat it. We, however, love it, and I do plan to make it more often now that our kids are grown and are rarely home to eat dinner with us anymore. It’s a simple dish, easy to throw together, and I honestly think it is better as leftovers the next day!

You will start by slicing up a 13.5 oz package of Polish Kielbasa sausage.

This is the brand I used for this recipe, but feel free to use whatever kind you like!

Melt 1 tbs of butter in a skillet and fry the sausages until they are nice and crispy and caramelized.

Remove from the pan and set aside.

Now you will chop up 1 lb of Yukon gold potatoes into bite sized pieces.

Dice up one green bell pepper and 1 yellow onion.

Add one more tbs of butter to the skillet then add the potatoes, pepper and onion. Season with garlic powder, onion powder, salt and pepper and some Slap Ya Mama. As usual, I do not measure but I would guess around 1 tbs each. Mix well and put the lid on and cook for 10 minutes, stirring occasionally.

Add the sausage back in.

Then add 2 cups of drained sauerkraut. Mix it all up really well, put the lid on, and simmer on low for about 15 minutes, stirring occasionally.
