Squash Casserole

Recipe:
Slice up 3 medium size yellow squash. Place on a cookie sheet, sprinkle with salt and bake for about 20 minutes. This is important to get rid of excess moisture. While that’s cooking, dice up 1/2 of a vidalia onion. Brown in some butter, season with salt and pepper and cook until translucent. Set aside. Grate 8 oz of sharp cheddar cheese  and set aside. When the squash is done, lay on paper towels and blot out the extra moisture. Pour into a large bowl with the onions. In a medium bowl, melt 1/2 stick of butter, and mix with 2 sleeves of crushed ritz crackers and the cheese. Mix half of that with the squash and onions. Season with a little more salt, some olive pepper and a garlic and herb blend. Whisk 2 eggs and 1/4 cup of milk and mix that in. Spread that into a greased 8×10 baking dish, then spread the other half of the ritz cracker mixture on top. Bake for about 20 minutes!Â
