How To Make Crockpot Beef and Noodles

This is just a summary, the full recipe is below. Season the chuck roast generously on all sides with a salt, pepper, and garlic seasoning blend.

Turn your slow cooker to the sear setting and add the avocado oil. Once hot, sear the roast on both sides until nicely browned. This step adds so much flavor and gives the beef a richer color.
Remove the roast and set it aside.
*If your slow cooker does not have this function, you can do it in a pan on the stove or just skip this step all together.*

Add the diced onion directly into the slow cooker and cook for a few minutes until slightly softened.
Stir in the cream of mushroom soup, brown gravy packets, and beef broth until combined.
Return the roast to the slow cooker.
Cover and cook on low for 8 hours or on high for 6 or until the beef is fall apart tender.

Remove the roast and shred the beef using two forks, discarding any large pieces of fat if needed.
Return the shredded beef to the slow cooker.
Add the frozen egg noodles directly into the gravy mixture and stir everything together well.
Turn the slow cooker to high and cook for about 1 hour, stirring occasionally, until the noodles are tender and the gravy is thick and hearty.

Tips For Success
- Searing the roast first adds a lot more flavor and helps create a richer gravy.
- Use frozen homestyle egg noodles for the best texture.
- If the gravy gets too thick, simply add a splash of beef broth.
- Stir the noodles occasionally while cooking so they cook evenly.
- Chuck roast works best because it becomes incredibly tender after slow cooking.
- Low sodium ingredients help keep the dish from becoming overly salty.

Notes
Make Ahead & Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. The noodles will continue soaking up gravy as they sit, so you may want to add a splash of beef broth when reheating. Reheat gently on the stovetop or in the microwave until warmed through. This recipe can also be frozen, although the noodles may soften slightly after thawing.FAQ
Can I cook the noodles separately? – Yes, just follow the directions on the package and add them in with the shredded beef.
Can I use a different cut of beef? – Chuck roast works best because it becomes tender during slow cooking, but stew meat can also work.
Can I add vegetables? – Absolutely. Mushrooms, peas, carrots, or even green beans work well in this recipe.
What if my gravy is too thick? – Add additional beef broth a little at a time until you reach your desired consistency.
Can I make this ahead of time? – Yes. It reheats very well for leftovers.
