I absolutely love potatoes in any form! There’s just something about their comforting texture and versatility that makes them a staple in my kitchen. But if I had to choose a favorite, it would definitely be baked potatoes. They are the perfect canvas for a myriad of toppings, and today, I’m excited to share one of my favorites: taco stuffed baked potatoes. This dish is not only budget-friendly and incredibly simple to prepare, but it can also be customized to suit any palate, making them ideal for serving company. Slow Cooker Cheesy Ground Beef and Potatoes
Arroz Con Pollo (Cheesy Chicken and Rice)
Ingredients:
- For the baked potatoes:
- 4 medium yellow potatoes (Russet potatoes are also a great option)
- Olive oil spray
- Ground salt
- Ground black pepper
- For the taco meat:
- 1 pound ground beef
- 1 small onion, diced
- 1 ounce taco seasoning
- ½ cup water
- For the cheese sauce:
- 8 ounces Velveeta cheese
- 4 ounces shredded pepper jack cheese
- 4-ounce can diced chilies
- 5-ounce can evaporated milk
- Toppings:
- Grated sharp cheddar cheese, Grated pepper jack cheese, Diced tomatoes, Sliced jalapeños, Sour cream, Chopped fresh cilantro, etc
Instructions:

Begin by washing and drying 4 medium yellow potatoes. Russet Potatoes also work great. Preheat your oven to 400°F and line a baking sheet with aluminum foil for easy cleanup. Poking holes in the potatoes with a fork allows steam to escape while cooking. Place the potatoes on the prepared baking sheet, spray them with olive oil, and rub it all over to ensure an even coating. Next, generously season the potatoes with ground salt and black pepper before placing them in the oven for about 45 minutes.



While the potatoes are baking, prepare the taco meat. In a skillet, brown 1 pound of ground beef along with a small diced onion over medium heat. Once the meat is fully cooked, be sure to drain off any excess grease. Now, add 1 ounce of taco seasoning and ½ cup of water to the skillet, stirring to combine. Let the mixture simmer for a few minutes, allowing the flavors to meld together.



As the potatoes and taco meat cook, you can whip up the creamy cheese sauce. In a saucepan, combine 8 ounces of Velveeta cheese, 4 ounces of shredded pepper jack cheese, a 4-ounce can of diced chilies, and a 5-ounce can of evaporated milk. Place the saucepan over medium-low heat, stirring continuously until all the cheese has melted and the mixture is smooth and creamy.




Lastly

Once the potatoes have baked for 45 minutes, it’s time to give them an extra crispy skin. Switch your oven setting to low broil and cook the potatoes for an additional 15 minutes. When they are done, carefully cut the potatoes open and fluff the insides. Season them with a little salt and pepper, then pour that luscious cheese sauce over the top. Next, add a generous scoop of taco meat, followed by a sprinkle of grated sharp cheddar and pepper jack cheese. Finish off with diced tomatoes, sliced jalapeños, a dollop of sour cream, and a sprinkle of fresh cilantro.

- 4 Medium Yellow Potatoes (Russets are also a great option)

- Cracked Salt and Pepper
For the Taco Meat
- 1 lb Ground Beef
- 1 Small Onion, diced
- 1 oz Taco Seasoning
- 1/2 Cup Water
For the Cheese Sauce
- 8 oz Velveeta
- 4 oz Shredded Pepper Jack Cheese
- 4 oz Can of Diced Chilies
- 5 oz Can of Evaporated Milk
Any Toppings you Like
- Grated Cheese, Tomatoes, Jalapenos, Sour Cream, Cilantro, Hot Sauce, etc
Instructions
- Preheat the oven to 400°F and prepare a baking sheet with foil.
- Wash and poke holes in the potatoes, then coat with olive oil, salt, and pepper. Bake for 45 minutes.
- Brown ground beef with diced onion, drain the excess grease, then add taco seasoning and water; simmer on low.
- In a saucepan, melt Velveeta, pepper jack, diced chilies, and evaporated milk over medium-low heat.
- Switch oven to low broil and bake potatoes for an additional 15 minutes.
- Cut open and fluff the potatoes, then top with cheese sauce, taco meat, and your choice of toppings.
