Cheesy BBQ Chicken and Potatoes

This BBQ Chicken and Potatoes skillet bake is one of the easiest dishes I have made lately! It has just a few simple ingredients. And with the help of an air fryer, it can be done in about 30 minutes or less. It is nothing fancy or pretty to look at, but my kids and hubby gobbled it up! I posted it on my social media channels before I had a chance to get it posted here and in less than a day it had over 1 million views!

How to Make BBQ Chicken and Potatoes

The first thing you will do is chop up some potatoes into bite-sized pieces. I used yellow potatoes with the skin on, but any type of potato will work!

Put them in a mixing bowl, and toss with olive oil, a salt pepper and garlic blend and coat them well.

The potatoes should take anywhere from 20-25 minutes to cook. This will give you time to get the chicken prepped and cooked. Everything will be done and ready to throw together at the same time.

To cook the chicken, you will cut it into bite-sized chunks and season with your favorite BBQ Rub. Make sure it is well coated. Cook it in a skillet over medium heat in about 1 tbs of oil. It is cooked all the way through when the internal temp reaches 165 degrees.

Once the chicken is cooked, add the crispy potatoes to the skillet. You’ll then toss in your favorite BBQ sauce and add some grated cheddar and cooked crumbled bacon on top. Bake at 400 for 10-15 minutes and dinner is ready!

This is a dish that is hearty enough to serve on its own, but some green veggies or a salad would pair nicely with it!

Cheesy BBQ Chicken and Potatoes

A simple and delicious chicken and potato dish guaranteed to please even the pickiest eaters!

Ingredients
  

  • 1.5 lbs Yellow Potatoes, chopped into bite-sized pieces any kind of potato will work
  • 1 tbs Olive Oil
  • 2-3 tbs Salt, Pepper and Garlic Blend seasoning
  • 1 lb Boneless Skinless Chicken Breasts, chopped into bite-sized pieces
  • 2-3 tbs BBQ Rub whatever your favorite kind is and enough to coat the chicken
  • 1 tbs Avocado Oil or any cooking oil of your choice
  • 1-2 Cups BBQ Sauce
  • 2 Cups Sharp Cheddar Cheese, grated
  • 6 slices Cooked, crumbled bacon

Instructions
 

  • Preheat oven to 400 degrees
  • In a mixing bowl, drizzle the potatoes with oil and the salt, pepper and garlic blend. Put in an even layer in the air fryer basket and air fry at 400 for approximately 20-25 minutes, being sure to shake the basket once or twice while cooking.
  • While the potatoes are cooking, season your chicken with the BBQ rub.
  • In a skillet over medium heat, cook in the avocado oil until cooked through. (Internal temp should be 165 degrees)
  • Add the potatoes and the BBQ sauce and mix well. Cover with the cheese and bacon and bake uncovered for 10-15 minutes until the cheese is melted

Notes

This recipe is interchangeable with a lot of different flavors of sauces. You could use Ranch, honey mustard, parmesan dressing, buffalo, etc. Be as creative as you want!
