Creamy Rigatoni with Boursin Cheese

This Creamy Rigatoni with Boursin Cheese is a delightfully tasty, yet extremely simple one-pot dinner! It can be on the table in about 30 minutes and it tastes like something you spent hours making! And it is pretty high on my family’s lists of favorites. And what’s not to love? Seasoned ground beef with plenty of garlic and a rich creamy tomato paste with the richness of Boursin Cheese mixed in? And rigatoni is the perfect pasta to really absorb all of those wonderful flavors! This dish is easy enough for any night of the week, but elegant enough to feed to company! I love keeping these ingredients on hand so I can throw it together at any time!

What are the ingredients?
- Ground Beef or Italian Sausage – I have used both and they are equally as good. If you use ground beef, just be sure to season it well!
- Yellow Onion
- Minced Garlic – please use fresh garlic if you can. It really does taste so much better than the jarred stuff. But! I will be the last to judge if you do not
- Garlic Powder
- Onion Powder
- Italian Seasoning
- Spaghetti Sauce or Marinara – I use a high quality one for this recipe because then I don’t need to add a lot of seasonings to it
- Rigatoni pasta
- Chicken Broth
- Garlic and Herb Boursin Cheese
- Fresh Parmesan – for serving
- Dried Parsley – for a garnish and dash of color

Can you make this ahead and freeze it?
You sure can! After preparing the dish, let it cool and wrap it tightly or vacuum seal it. It will last in the freezer for 2-3 months. The pasta may fall apart some when reheating, but it should hold its form pretty well. Let it thaw in the fridge, then reheat in a large pan over very low heat.
How do you make Creamy Rigatoni with Boursin Cheese?
I am so glad you asked! Here is how:

In a large dutch oven, you will brown the ground beef with the onion and garlic. Once browned, you will drain it (unless you prefer not to), and season with the spices.
Then you will mix in the sauce, the pasta and the chicken broth. You will let it come to a gentle boil and put the lid on, stirring occasionally. It will take approximately 20 minutes for the pasta to become al dente.
When the pasta is cooked, simply stir in the Boursin Cheese until it is completely melted.









Sprinkle with some dried parsley for a bit of color and top with some freshly grated parmesan cheese to serve. And now you have a restaurant quality dish at a fraction of the price and you don’t have to change out of your sweatpants to eat it!
Since this is a hearty dish on its own, you can serve it by itself but some garlic bread and a salad always go well with pasta!

Creamy Rigatoni with Boursin Cheese
Ingredients
- 1 lb Ground Beef or Italian Sausage
- 1 Yellow Onion, Diced
- 3-4 Garlic Cloves, minced
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 1 tsp Italian Seasoning
- 24 oz Jar of Spaghetti Sauce or Marinara
- 1 lb Rigatoni Pasta
- 4 Cups Chicken Broth
- 5 oz Package of Garlic and Herb Boursin Cheese
- Fresh Grated Parmesan for serving
- Dried or Fresh Parsley, for garnish
- Salt and Pepper to taste if needed
Instructions
- In a dutch oven, over medium heat, brown the ground beef with the onion and garlic. If desired, drain the grease when the meat is fully cooked.
- Stir in the seasonings.
- Add the sauce, the pasta and the chicken broth. Stir well and bring to a gentle boil
- Place the lid on and reduce to a simmer. Cook for approximately 20 minutes or until pasta is al dente.
- Stir in the Boursin cheese until it is completely melted
- Salt and pepper to taste IF NEEDED
- Garnish with parsley and top with parmesan for serving.

Made this last night for dinner. It was amazing and very easy. My only change was that I used rotini instead of rigatoni since that’s what I had on hand. We loved it and will definitely make it again. Thank you so much

I’m making an extra pot for the beach, Would you add the Boursin cheese when done or freeze the pasta with the sauce and add the Boursin cheese when you thaw it out and warm to serve?

I recommend making the recipe just as it is called for and then freezing it! But either way will work! Adding it in before freezing will be one less thing to pack though! Enjoy your beach stay! I am quite jealous! 🙂

You sure could! But you would need to cook the pasta separate and add it in at the end!
The sauce turned out really delicious! I didn’t have a full pound of pasta, and I like to use whole wheat, so I opted to cook it separately. Even after simmering without the lid, adding parm and a little starch, the sauce was still a little thin. I think cooking the pasta in the sauce must make a big difference in thickening it up.

Made this pasta using Italian sausage, a bit of tomato paste to thicken, with homegrown/made marinara sauce & home grown herbs, & adding in some red wine & letting the sauce simmer for quite some time before adding the cheese & pasta. The man was in awe, really loved the sauce in this one! He can’t wait for the leftovers! (& neither can I)

This is absolutely delicious!!! Super easy to make, you gotta love the one pot dishes. I used Italian sausage, Rao’s for the sauce which imo is so good, backed off on the amount of pasta a bit and few other spices and sugar. Thank you, for a fantastic recipe!!

My husband has devoured this. He’s on his 2nd helping. We’re in the middle of Hurricane Debby so I used mostly rigatoni but didn’t have enough so I used farfelle to round it out. I used beef broth bc that’s what I had. Next time I will use Italian sausage bc I love it with pasta dishes. This will definitely be made again and again. I love one pot dishes! In the recipe it says a tbs of each spice. As in a tablespoon?? That should be tsp right? Teaspoons?

Great!! Boursin was on sale at Costco so I had SO MUCH OF IT and this was perfect to use some of it before it goes bad.

Very good. I added a half bag of frozen chopped spinach before serving. For just the 2 of, & trying to keep the carbs low & protein high, I only out in about 8 oz of pasta and also did just 2 cups of beef broth.

I love this recipe. I have made it 3 times. I find it to be best with spicy Italian sausage. The recipe says 6 servings, but those are generous servings; you could probably feed 8. I have taken leftovers to lunch in a lunch crockpot and it reheats that way perfectly.
I am going to serve it to my extended family for Christmas Eve dinner so I will need to double the recipe because there are 12 of us. I am not sure if the cooking times would change. If anyone has tried this please let me know. Otherwise I may just make it in two side-by-side pots.
