One Pot Cheesy Smoked Sausage with Bowtie Pasta

I know I probably sound like a broken record at this point but I can’t help it! I LOVE ONE-POT MEALS! And this One Pot Cheesy Smoked Sausage with Bow Tie Pasta is outstanding!!!! I often stand in front of the fridge and stare at what is staring back at me wondering what I am going to make for dinner. Is this normal? Please tell me this is normal! Anyways. Smoked andouille sausage is something I usually have on hand because it is just such a versatile meat to cook with and it is rather inexpensive. So I saw the sausage. And then I looked in the vegetable drawer and found some peppers and then I found some cheese and my brain started ticking. Hence, this wonderful dish was born!

Here are some more one-pot meals for you to check out while you are here!

What is in it?

Good question. I will tell you!

  • 1 lb of smoked Andouille Sausage, or any type of pre-cooked smoked sausage will do
  • 1 red and 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1 jalapeno, diced (optional)
  • 4 tbs butter
  • 1 tbs olive oil
  • 6-7 minced garlic cloves
  • (1) 14.5 oz can of fire roasted diced tomatoes
  • 1 cup half and half or milk
  • 3 cups chicken broth
  • 12 oz bow tie pasta or any other short pasta type
  • 8 oz sharp cheddar cheese
  • 8 oz pepper jack cheese
  • Garlic powder, onion powder, salt, black pepper, and Slap Ya Mama (optional)

This recipe can be made spicy or not. The way to make it spicy is by adding in a jalapeno and the Slap Ya Mama Seasoning. If you are not a fan of spice, simply leave those two things out, and it will not be spicy at all! If you are like me and you want all the spiciness, add extra jalapenos and seasoning!

How To Make It:

In a very large skillet, melt the butter and oil over medium heat. I am loving my new Klee 3.8 Quart Yellow Casserole Dish. You could also use a Dutch Oven if you do not have a large enough pan!

Toss in your chopped up peppers and onions and season them up. Sauté them for about 5 minutes.

What is Slap Ya Mama?

Here is the Slap Ya Mama Seasoning that I use on pretty much everything! Most grocery stores sell it, but if for some reason yours doesn’t, Amazon has a great deal on a variety pack that you can find here. This stuff is so good! I knew nothing about it until visiting friends in Louisiana and they put it on everything and I had to have some. Now I can’t get enough of it! Okay, back to the recipe!

After you have sauteed the veggies for five minutes, push them to one side of the pan, then put your sausage in the other side. You want to get your sausage nice and browned. When your sausage is browned, add in the garlic and cook for another minute.

Now, mix in the can of fire roasted diced tomatoes. A can of Rotel would also work great here! Now you are going to stir in your half and half (or milk) and chicken broth and your pasta.

You want to make sure all of the pasta is completely submerged under the liquid. If it isn’t, add a little more broth until it is. Then you want to bring it to a gentle boil and place the lid on. Reduce heat to a simmer. Cook for 15-20 minutes until the pasta is cooked.

Here is another cool kitchen gadget that I feel is worth telling you about. It is a battery operated can opener. And it sits on top of the can and you just press the button and it does its thing. It produces a really clean cut with no sharp edges and is convenient and really great for people with arthritis or other hand/wrist problems! You can find it here at Amazon!

And The Last Step:

And now you will start stirring in your cheeses a little at a time until you have it all completely melted. That’s all there is to it!

What is good to serve with this?

Honestly, I think this dish is so hearty that it does not need anything to go with it. But a salad or a green veggie would be nice or even some cornbread or dinner rolls or garlic bread would be good! The choice is yours my friends!

So I’m making this tonight. It looks amazing. But you have spices listed. Yet in the recipe I didn’t see where you added them.

Pamela, I am so sorry I wasn’t able to reply on the day you made this. I have updated the recipe card to indicate when the seasonings go in, which is when you add the vegetables! Hopefully you were able to make it and it turned out great!
