Cheesy Potatoes and Ground Beef Casserole

Sometimes simple dishes can be just as tasty as complicated ones! As is the case with this Cheesy Potatoes and Ground Beef Casserole. This dish is one that my mom made often for us as kids. And when I became a single mom I made it a lot for my children. Back then the ingredients were VERY inexpensive and this is what we considered a “struggle meal”. (Perhaps not so much anymore with the ever-so-high cost of groceries, but it is still an affordable one.) It is still a delicious meal though and very much worth sharing! It is also very easy to prepare, so an all around win-win!
Ingredients Needed:
- 1 lb of ground beef (ground chicken, turkey or sausage will also work)
- 1 diced yellow onion
- 2.5 lbs russet potatoes (or any kind of potato you have on hand)
- 1 can cream of chicken soup (you can substitute any kind of cream of soup that you like)
- 1 can of evaporated milk
- 8 oz cubed velveeta cheese
- 8 oz grated cheddar cheese
- Garlic Powder, Onion Powder, Black pepper

You will start by browning the ground beef in a large cast iron pan such as this Klee 3.8 Quart Yellow Casserole Dish that I absolutely love! Once the meat is cooked, drain off the excess grease if desired. (I always say this is personal preference and not required!) Then season it with the garlic powder, onion powder and black pepper and give it a good mix.

After that you are going to slice up the potatoes really thin. I am not good at measuring, but I would say roughly 1/8th of an inch thick. Really thin!


Now you will add the cream of chicken, the evaporated milk and the velveeta to the ground beef and stir it until all of the cheese is melted.




Carefully stir in the sliced potatoes, then grate up the cheddar cheese and spread on top. If you don’t have one of these cheese graters, I highly recommend one! It has been one of the best purchases I have made this past year!
Cover with the lid and bake at 400 degrees for about 45 minutes or until the potatoes are tender.




We always have this with a side of green beans and buttered white bread. It would be sacrilegious not to! But it would go great with a number of things. Any green veggie, or a salad would be great. And dinner rolls or garlic bread as well would be good. You could even mix the veggies in if you wanted to! Feel free to make it your own!

Ingredients
- 1 lb Ground Beef Chicken, Turkey, or Sausage will work too
- 1 Yellow Onion, Diced optional
- 1 tbs Garlic Powder
- 1 tbs Onion Powder
- 1 tsp Black Pepper
- 10.5 oz Can of Cream of Chicken Soup can substitute any flavor cream soup
- 12 oz Can Evaporated Milk can substitute with 12 oz whole milk
- 8 oz Cubed Velveeta Cheese can substitute with cream cheese
- 2.5 lbs Russet Potatoes, thinly sliced or whatever type of potatoes you have on hand
- 8 oz Sharp Cheddar Cheese, grated
- Salt to taste, if needed
Instructions
- Brown the ground beef with the diced onion, and drain the excess grease, if desired. Season with the listed spices. Mix well and set aside.
- Mix in the soup, milk and velveeta. Stir until all of the cheese is melted and set aside.
- Preheat the oven to 400 degrees.
- Slice the potatoes to about 1/8th of an inch thick. Mix into the ground beef and cheese. Cover with the grated cheddar.
- Place the lid on and bake for about 45 minutes or until the potatoes are tender.
