Chicken Tacos

Chicken Tacos are a family favorite in my household! They are very easy to make and can feed about 4-6 adults. The chicken can be made in the crockpot or instant pot and it turns out so tender and juicy and flavorful. There are several different methods I use when preparing them, but melting the cheese on the outside of the corn tortilla is my family’s favorite. You can skip this step and just fry them in a little oil or you can just simply warm the tortillas up and add the filling. Any way you do it, they will turn out amazing!

How to Make Chicken Tacos

You will start by adding 3 large chicken breasts into the crockpot. Add the seasonings listed in the picture. I do not measure, but I really don’t think you can put too much! But if I had to guess, it’s probably about 2-3 tbs of each.

You will then add 1 diced onion, 1 can of diced grenn chilies, and 2 cups of chicken broth.

Cook on high for 4-6 hours or low for 6-8, until the chicken is fall apart tender.

Remove the chicken and shred it up. Using a handheld mixer makes this step super easy. It is a kitchen hack I learned over 20 years ago and it’s one of the best ones I have ever learned! You can also use 2 forks to do this if you do not have a mixer.

Put it back in the crockpot and stir it up and let it reabsorb all the juices. Now it is time to assemble your tacos.

This is the type of cheese I like to use for these, but you can use any type that you like. Just make sure it is a good melting cheese and it needs to be shredded.

Heat up a non-stick skillet to medium heat and sprinkle on about 1-2 tbs of the cheese.

Place your tortilla on top and press it down onto the cheese.

Add a couple more tbs of cheese to the inside of the tortilla, making sure to cover the entire circumference.

Add about 2 tbs of the chicken on one half.

When the cheese is starting to brown, fold it in half.

Flip it once and cook until both sides are brown and crispy. Repeat this process for each taco.

Once they are finished, add your desired toppings inside. I used some fresh pico de gallo, some guacamole and chopped fresh cilantro.

I like to serve with a side of Spanish style rice and some refried beans.

Ingredients
  

  • 3 Large Boneless Skinless Chicken Breasts or Thighs about 2.5 lbs
  • 1 Yellow Onion, diced
  • 2 Cups Chicken Broth
  • 4 oz Can Diced Green Chilies
  • 30 Count Corn tortilla
  • 3 7.06 oz Bags of Chihuahua Cheese

Seasonings

  • Salt
  • Pepper
  • Chili Powder
  • Smoked Paprika
  • Garlic Powder
  • Onion Powder
  • Oregano
  • 2 Packets of Sazon

Instructions
 

  • Place the chicken in the crockpot and use all of the above listed seasonings. I do not measure, but it is approximately 2-3 tbs of each. You cannot over season this!
  • Add the onion, the green chilies and the chicken broth. Cook on low for 6-8 hours or on high for 4-6 hours.
  • Once the chicken is done, shred it up and stir it into the juices in the crockpot
  • Heat a non-stick skillet to medium heat.
  • Sprinkle 1-2 tbs of the cheese into the skillet, then place a tortilla on top of it, pressing down to adhere the cheese to it.
  • Sprinkle some more cheese on the entire circumference of the tortilla and about 2 tbs of the chicken mixture on half.
  • Fold the tortilla in half and flip once, cooking until the cheese is golden brown and toasty on both sides.
  • Repeat this step for each taco.
  • Fill with desired fillings and enjoy!

Notes

I like to use some fresh pico de gallo, some guacamole and cilantro as filling for the tacos. I also like to serve them with a side of Spanish Rice and Refried beans.

    I knew this was going to be simple and easy to make. But I had no idea this was going to be extremely delicious.
    I just made this for my wife’s birthday and she absolutely loved it. I even heated up the corn tortillas just like it said here with the cheese. Though the first one wasn’t the way it should have. On the second try it came out just right. It took practice, but we like the cheese well cooked.
    This is one we will do again. Thank you for sharing. Looking forward to cook more of your recipes.

    Can’t wait to try this. However, I am not one that is comfortable measuring with my heart, so are you estimating 1-2 Tbsp or tsp of the seasonings?

      Hi Christine! I totally understand and this has been the hardest part of starting this blog for me because I have never been one to measure seasonings, but I am definitely estimating these in tablespoons! I will try to me more precise from now on! Thank you for your question!
