If you are like me and love everything lemon, from lemon bars to pies to cookies, then this super simple lemon cake is just for you! It is perfect for when you are craving that lemon flavor but don’t want to make anything too labor intensive. It is also perfect for a last minute dish to throw together for a potluck. Not a big lemon fan? No problem! One of the ingredients is a can of pie filling, so you are not limited with your flavor options! And if you want to get creative, you can throw in some fresh fruit, such as blueberries, raspberries or strawberries! But then we would have to change the name I guess….and that is just fine with me. After all, recipes are meant to be altered. So think of this as a simple base. It could also be a good recipe for a beginner!
No matter what, it will definitely be a keeper because of its simplicity and its delicious flavor!

3 Ingredient Phyllo Cups with Brie and Apple Jalapeno Jelly
Ingredients Needed:
- A 16 oz box of Angel Food Cake Mix – buy the one that requires only water to be added to the mix but do not add the water
- 21 oz can of lemon pie filling
- Juice and zest of 1 lemon
- Powdered Sugar
How To Make It
As I said before, It could not get any easier. Simply dump the cake mix, the pie filling and the juice and the lemon zest into a bowl and mix until incorporated and smooth- don’t over mix or whip.
Spread into a greased 9×13 baking dish and bake at 350 degrees for about 30 minutes or until a toothpick inserted in the center comes out clean.
Once it is completely cooled, dust on the powdered sugar. Cut into 12 squares and enjoy!

4 Ingredient Lemon Cake
Ingredients
- 16 oz Box of Angel Food Cake Mix Make sure to buy the kind that requires only water to be added to the mix but DO NOT ADD THE WATER!
- 21 oz Can of Lemon Pie Filling
- 1 Large Lemon, Juiced and Zested
- Powdered Sugar for dusting on top of the cake
Instructions
- Preheat oven to 350 degrees
- Spray a 9×13 baking dish with non-stick cooking spray.
- Add the 1st three ingredients to a bowl and combine until incorporated – do not over mix or whip.
- Pour batter into the baking dish and bake for about 30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- Lightly dust with powdered sugar. Cut into squares and enjoy!
