An incredibly tasty one pot meal filled with peppers, onions, smoked sausage, cheese and bow tie pasta!

Ingredients
1tbsOlive Oil
4tbsButter
1each Red and Green Bell Pepper, Diced
1Yellow Onion, Diced
1Jalapeno, Dicedoptional
6-7Garlic Cloves, minced
1lbAndouille Sausage, sliced
14.5ozCan of fire roasted diced tomatoes
1cupHalf and HalfMilk will also work
3cupschicken broth
12ozBow Tie Pasta
8ozSharp Cheddar Cheese, grated
8ozPepper Jack Cheese, grated
Seasonings
1tbsGarlic Powder
1tbsOnion Powder
1tspBlack Pepper
1-2tspSlap Ya Mama or any Cajun Seasoningoptional
Salt to taste
Instructions
In a large pan or dutch oven, melt the oil and butter over medium heat. Saute the peppers and onions for about 5 minutes and add the seasonings listed above.
Push the veggies to one side and add the sausage to the pan. After the sausage is browned, add the garlic and cook for another minute.
Stir in the can of tomatoes, the half and half, the chicken broth and the pasta. Be sure that all of the pasta is submerged. If it isn't, add more broth until it is.
Bring to a gentle boil. Put the lid on. Reduce heat to a simmer and cook for 15-20 minutes until the pasta is done, stirring occasionally.
When the pasta is cooked, stir the cheese in a little at a time, until it is all completely melted. Serve hot and enjoy!
