Ingredients

  • 1 tbs Olive Oil
  • 4 tbs Butter
  • 1 each Red and Green Bell Pepper, Diced
  • 1 Yellow Onion, Diced
  • 1 Jalapeno, Diced optional
  • 6-7 Garlic Cloves, minced
  • 1 lb Andouille Sausage, sliced
  • 14.5 oz Can of fire roasted diced tomatoes
  • 1 cup Half and Half Milk will also work
  • 3 cups chicken broth
  • 12 oz Bow Tie Pasta
  • 8 oz Sharp Cheddar Cheese, grated
  • 8 oz Pepper Jack Cheese, grated

Seasonings

  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tsp Black Pepper
  • 1-2 tsp Slap Ya Mama or any Cajun Seasoning optional
  • Salt to taste

Instructions

  • In a large pan or dutch oven, melt the oil and butter over medium heat. Saute the peppers and onions for about 5 minutes and add the seasonings listed above.
  • Push the veggies to one side and add the sausage to the pan. After the sausage is browned, add the garlic and cook for another minute.
  • Stir in the can of tomatoes, the half and half, the chicken broth and the pasta. Be sure that all of the pasta is submerged. If it isn't, add more broth until it is.
  • Bring to a gentle boil. Put the lid on. Reduce heat to a simmer and cook for 15-20 minutes until the pasta is done, stirring occasionally.
  • When the pasta is cooked, stir the cheese in a little at a time, until it is all completely melted. Serve hot and enjoy!
