One-Pot Lazy Lasagna Recipe

Anytime I can turn a classic dish that usually requires a lot of prep and time to make into a one-pot meal, I get pretty excited! A lazy girl’s dream come true! This lazy lasagna may not be authentic, but it sure is tasty and requires just a few simple ingredients and can be thrown together in about 15 minutes. You get to enjoy all of the wonderful flavors of the classic dish with without all the work! What’s not to love?

The 1st thing you will do is brown 1.5 lbs of ground beef with one diced onion and 6-7 minced garlic cloves.

Drain the grease and return to the pan. (As I always say, draining the grease is just a personal preference and is not necessary if you prefer not to.)

The next thing you will do is stir in 24 oz of your favorite spaghetti sauce (the recipe for my homemade sauce can be found here https://whatsmomcookin.com/homemade-spaghetti-sauce/), 2 cups of beef broth and 8 oz of broken up lasagna noodles.

You will then cover it with the lid, reduce heat to simmer and cook for 25 minutes, stirring occasionally to keep the noodles from sticking together. This is what it will look like at this point.

Stir in 1 cup of cottage cheese, or you can use ricotta if you like.

This is optional but I like to sprinkle on some grated parmesan cheese.

Cover with 8 oz of shredded mozzarella and put uner the broiler for about 5-7 minutes or until the cheese is golden brown and bubbly.

I like to serve this with a fresh salad and some garlic bread.

Lazy Lasagna

This lazy lasagna may be quick and easy but tastes like it took all day to make!

Ingredients
  

  • 1.5 lbs Ground Beef
  • 1 Yellow Onion, diced
  • 6-7 Garlic Cloves, minced
  • 24 oz Spaghetti Sauce, jarred or homemade
  • 2 Cups Beef Broth
  • 8 oz Lasagna noodles, broken into small pieces
  • 1 Cup Cottage Cheese, or ricotta if you prefer
  • 8 oz Mozzarella Cheese, grated

Instructions
 

  • Brown the ground beef with the onion and garlic. After it is cooked, drain the grease and return to the pan.
  • Stir in the spaghetti sauce, the beef broth and the broken up lasagna noodles. Make sure all of the lasagna is covered with liquid. (For my homemade spaghetti sauce recipe, I will have it linked below)
  • Put the lid on, reduce heat to simmer and cook for 25 minutes
  • When it is done cooking, stir in the cottage cheese (or ricotta)
  • Sprinkle some parmesan cheese, then top with the mozzarella. Put it under the broiler in the oven, or you can just put the lid on until the cheese is melted.

Notes

If you are going to put this in the oven, make sure your pan is oven-safe. If not, you can transfer it to a baking dish before you put the cheese on.
