How To Make Chili Cheese Baked Potatoes

Wash and dry 3-4 large russet potatoes. You can use a different variety of potato if you desire. I like the russets because they are larger and are made for baking. When they are dry, poke them several times with a fork. Brush them with olive oil and sprinkle with salt and pepper. Air fry at 400 degrees for approximately 40-45 minutes. Or bake them in the oven at 400 degrees for 45 minutes to an hour. (*Cooking times will vary based on the size of the potatoes and individual cooking appliances.)

While the potatoes cook, brown 1 lb of ground beef with a diced onion. When the beef is cooked, drain the excess grease. Add 1 packet of chili seasoning mix, one can of fire roasted diced tomatoes and one can of chili beans. Mix well. Put the lid on and let it simmer on low until the potatoes are done. You do not need to add any broth to this because the chili needs to be thick.

When the potatoes are done, cut them in half lengthwise. Use a fork to fluff the insides. Season with salt and pepper. Add a layer of cheese, then the chili. At this point, dress it up however you like! I used more cheese, sour cream and green onions. Other good toppings would be jalapenos, hot sauce, fritos or crackers!

As far as side dishes, I don’t make any with these because it is really a full meal in itself. But I think some cornbread or even just a side salad would go great with this!

Big fluffy baked potatoes are loaded up with tasty chili, gooey melty cheese and whatever toppings your heart desires!

Ingredients
  

  • 3-4 Large Russet Potatoes
  • 1 tbsp Olive Oil
  • Salt and Pepper
  • 1 lb Ground Beef Ground chicken, turkey, pork etc will also work
  • 1/2 Yellow Onion, Diced
  • 1 Packet of Chili Seasoning Mix any brand will work
  • 14.5 oz Can of Fire Roasted Diced Tomatoes
  • 15 oz Can of Chili Beans
  • 8 oz Grated Cheese any flavor you like
  • Additional Toppings Sour cream, jalapenos, green onions, hot sauce, etc

Instructions
 

  • Wash and dry the potatoes. Use a fork to poke several holes in them. Brush with the oil and sprinkle with salt and pepper.
  • Air fry at 400 for approximately 40-45 minutes. Or bake them in the oven at 400 degrees for approximately 45 minutes to 1 hour. *Cooking times will vary depending on the size of the potatoes and the cooking appliance.*)
  • While the potatoes cook, brown the ground beef and onions in a skillet over medium heat. When it is finished, drain off the excess grease. Add the chili seasoning, diced tomatoes and chili beans. Mix well. Put the lid on and let simmer on low until the potatoes are done.
  • When the potatoes are done, split them open and fluff the insides with a fork. Fill them with the cheese and chili and any additional toppings you like. Serve hot and enjoy!
