3-4Large Russet Potatoes
1tbspOlive Oil
Salt and Pepper
1lbGround BeefGround chicken, turkey, pork etc will also work
1/2Yellow Onion, Diced
1Packet of Chili Seasoning Mixany brand will work
14.5ozCan of Fire Roasted Diced Tomatoes
15ozCan of Chili Beans
8ozGrated Cheeseany flavor you like
Additional ToppingsSour cream, jalapenos, green onions, hot sauce, etc
Instructions
Wash and dry the potatoes. Use a fork to poke several holes in them. Brush with the oil and sprinkle with salt and pepper.
Air fry at 400 for approximately 40-45 minutes. Or bake them in the oven at 400 degrees for approximately 45 minutes to 1 hour. *Cooking times will vary depending on the size of the potatoes and the cooking appliance.*)
While the potatoes cook, brown the ground beef and onions in a skillet over medium heat. When it is finished, drain off the excess grease. Add the chili seasoning, diced tomatoes and chili beans. Mix well. Put the lid on and let simmer on low until the potatoes are done.
When the potatoes are done, split them open and fluff the insides with a fork. Fill them with the cheese and chili and any additional toppings you like. Serve hot and enjoy!
