Grinder Salad Sandwich

If you are on social media, specifically TikTok, then you most likely know about the viral grinder salad sandwich. In the spring of 2022, it was everywhere! And even though I am not one to really hop on the viral trends a lot, I knew I had to try this one. And holy heck, am I glad I did! This takes your sandwiches to a whole new level. You can use any variety of meats, cheeses and breads that you like. I even switched up the actual “salad” but stayed consistent with the concept. I have had TONS of people message and comment me saying how much they loved this version so let me show you how I put my spin on the viral sandwich!

The hardest part of starting this website is trying to post measurements. I am a throw-it-together and adjust for taste later kind of person, but I realize that a lot of people are not wired that way, so I will do my best to give precise measurements. In a bowl, you want to mix about 1/4 cup of mayonnaise.

Then add in about 1/4 cup of Sub dressing.

Then add about 1 tbs of some crushed red pepper flakes. You can definitely omit these if you don’t want the spiciness. Mix that together really well.

Add in 2 cups of shredded lettuce.

Then add 1/2 of a red onion, diced.

Add 1/4 of a cup of pickled banana pepper rings.

Then finally, about 1/4 cup of chopped up dill pickles.

Mix it up and set aside!

Slice open a loaf of french bread. I actually prefer ciabatta bread but both work great! Spread some butter on both sides and bake in a 400 degree oven for about 5 minutes or until the bread is lightly toasted.

Top one side with your desired meat(s) of choice. I used ham, and genoa salami.

Top the other side with your cheese(s) of choice. I used white american and provolone.

Put it back in the oven for a few minutes, just long enough to get the cheese melted.

Now top it with the salad mix and any other toppings you like. I used cucumbers, tomatoes and hot giardiniera. Yummmm!!!!

This is a very large sandwich, and is enough for at LEAST 4 people. (Unless you have an appetite like my husband lol). This makes it perfect for parties or even for lunch or dinner of a family of 4-6. DO NOT make the salad any more than about an hour before eating it though because the lettuce will become soggy!

Recipe:

Ingredients:

  • 1/4 cup of mayonaisse
  • 1/4 cup of Submarine Dressing
  • 1 tbs red pepper flakes
  • 2 cups shredded lettuce
  • 1/2 red onion, sliced
  • 1/4 cup pickled sliced banana peppers
  • 1/4 cup chopped dill pickles
  • 1 loaf French bread or Ciabatta bread
  • 3-4 tbs butter
  • 1-2 lbs sliced deli meat (any flavor that you like)
  • 8-10 slices of cheese (any flavor you like)
  • Sandwich toppings (ex. tomatoes, sliced cucumbers, black olives, etc)

Directions:

  1. Preheat oven to 400 degrees.
  2. In a bowl, mix together the first 7 ingredients and set aside.
  3. Slice the bread and spread butter on each side.
  4. Bake for about 5 minutes or just until the bread is slightly toasted
  5. Place your meats on one side and your cheese on the other
  6. Put back in the oven for a few minutes or until the cheese is melted
  7. Top with the salad mixture and any other sandwich toppings of your choice. Slice up into servings and enjoy right away!

IMPORTANT NOTE: Do not make the salad mixture more than an hour before you plan on making this as the lettuce becomes soggy very quickly!
