No-Bake Shamrock Shake Dessert: The Perfect St. Patrick’s Day Treat
If you love the Shamrock Shake from McDonald’s then you are going to love this No Bake Shamrock Shake Dessert! It starts with a layer of crushed Oreos as the crust. Then a minty cheesecake layer followed by a creamy, minty pudding layer. It is topped off with a layer of whipped cream and decorated with cute little shamrock sprinkles! It is perfect for taking to a St. Patrick’s Day celebration to share with friends and family. And it is addictingly good, so I am just letting you know that up front! The Origin of St. Patrick’s Day
St. Patrick’s Day, celebrated on March 17th, honors the death of St. Patrick, the patron saint of Ireland. Originally a religious holiday, it has evolved into a celebration of Irish culture, marked by parades, music, and of course, delicious food! In the United States, St. Patrick’s Day has become a day to celebrate Irish-American heritage, with many people donning green attire and indulging in traditional Irish fare.

Ingredients You Will Need:
- Layer 1: Cookie Crust
- 24 Oreo cookies, crushed (about 2 sleeves)
- 6 tablespoons salted butter, melted
- Layer 2: Cheesecake Layer
- 8 ounces cream cheese, softened to room temperature
- 1/4 cup granulated sugar
- 1 teaspoon pure peppermint extract
- 8 ounces Cool Whip original whipped topping, thawed
- Layer 3: Pudding Layer
- 3.4 ounces Jell-O vanilla instant pudding (1 package)
- 1 3/4 cups cold milk
- 1 teaspoon mint extract
- Green food coloring (a few drops, adjust to desired color)
- Topping
- 8 ounces Cool Whip extra creamy whipped topping, thawed
- 1/4 cup miniature chocolate chips
- Green candy sprinkles (for decoration)
Instructions:
This no-bake shamrock shake dessert may seem like it has several steps, but it comes together quite easily!

this is just a summary, the full recipe is below! In a food processor, crush 24 Oreo cookies until they become fine crumbs. If you don’t have a food processor, you can place the cookies in a large Ziploc bag and crush them with a rolling pin until finely crushed. Melt 6 tbsp of salted butter and mix them with the cookie crumbs in the bottom of a 9×13 baking dish. Press the mixture firmly into the bottom to form a solid crust. Place the dish in the refrigerator to set while you prepare the next layer.


In a mixing bowl, beat together 8 ounces of softened cream cheese, 1/4 cup of granulated sugar, and 1 teaspoon of pure peppermint extract using a hand mixer until the mixture is smooth and creamy. Gently fold in an 8-ounce container of thawed Cool Whip original whipped topping until fully combined, ensuring the mixture remains light and fluffy.
Spread the cheesecake mixture evenly over the cooled cookie crust in the baking dish.
Return the dish to the refrigerator to chill while you prepare the pudding layer.





In a separate mixing bowl, whisk together 3.4 ounces of Jell-O vanilla instant pudding, 1 3/4 cups of cold milk, 1 teaspoon of mint extract, and a few drops of green food coloring. Use a hand mixer to whip the mixture until it thickens, which should take about 5 minutes. Once thickened, carefully spread the pudding mixture over the cheesecake layer in the baking dish. Place the dish back in the refrigerator to chill for at least three hours, allowing the layers to set completely.



Lastly

After the dessert has set, remove it from the refrigerator. Spread an 8-ounce container of thawed Cool Whip extra creamy whipped topping evenly over the top of the pudding layer. Sprinkle 1/4 cup of miniature chocolate chips and green candy sprinkles on top for decoration.

- In a separate mixing bowl, whisk together the vanilla instant pudding, milk, mint extract, and green food coloring. Use a hand mixer to whip the mixture until it thickens.
- Carefully spread the pudding mixture over the cheesecake layer in the baking dish. Chill for at least three hours to allow the layers to set completely.
- After the dessert has set, remove it from the refrigerator. Spread the extra creamy whipped topping evenly over the top of the pudding layer. Sprinkle miniature chocolate chips and green candy sprinkles on top for decoration.


This was easy to make but even with reducing the peppermint extract to 1.5 tsp total instead of 2, it was still too minty for my family. I would probably go down to 1 tsp total if I make again.

Actually I agree with you. I cut the amount in 1/2 total and it was perfect. If its going to be like a shamrock shake, the mint flavor in one isn’t that strong
What would be the outcome if you used powdered sugar rather than granulated sugar.

Just the texture will change. It will be slightly more dense. You will need to use 1 3/4 cup of powdered sugar instead of 1 cup of granulated! But the taste will still be great!
Delicious!!! I did reduce the peppermint extract for a total of 1 tsp. Do you think the vanilla pudding could be replaced with pistachio instant pudding and add the peppermint extract to the cream cheese layer only?
