If you love strawberries, then you are sure to love these Strawberry Crumble Bars! The buttery crust complements the sweetness of the strawberry filling and it is absolutely scrumptious! I haven’t met a person yet who has been able to resist these! My grandma would have these on the dessert table for every family gathering and I can remember eating them until I had a belly ache! Now that I am an adult I have a bit more self-control….but not much! So I only make these when I have a party to take them to because if they sit in my house for too long I will not be able to resist! Enough of my chitter chatter, let’s get to the recipe!
How to Make Strawberry Crumble Bars:
You will begin by assembling the crust ingredients in a large mixing bowl. You will mix together 3 cups of all purpose flour, 1.5 cups of sugar,1 tsp of salt, the zest of 1 lemon, 1/2 cup of very cold unsalted butter, cut into cubes. You can use a food processor or stand mixer to do this but I find a pastry cutter works best. The result you want at this stage is for the butter to be small pea=sized pieces.
Now you will add in 3 beaten eggs until you get a crumbly, but somewhat firm dough. If you have troubel getting the dough to come together with a mixer, use your hands! I think sometimes the size of the eggs makes the difference in this step!
Now you want to cut a piece of parchment paper to fit into a 9×13 baking dish allowing for overhang so you can easily lift the bars out of the pan to cut!
Press 2/3 of the crust mixture into the bottom of the pan.
For the Strawberry Filling:
Wash, rinse and slice 2 lbs of strawberries. Transfer them to a large bowl. Mix in the juice of 1 lemon, 1 tbs of cornstarch and 3/4 cup of sugar.
Now pour the strawberries over the crust in the baking dish, then spread them out evenly with a rubber spatula. Crumble the remaining dough over the strawberry layer. Bake at 350 degrees for 45-50 minutes until the crust is slightly golden brown. Let cool completely before cutting.
These can be enjoyed on their own, or as an extra indulgent dessert with a scoop of vanilla ice cream! No matter what I am certain that you are going to love them!

Crust/Topping
- 3 Cups All Purpose Flour
- 1.5 Cups Granulated Sugar
- 1 Tsp Salt
- 1 Large Lemon Zest
- 1/2 Cup Unsalted Butter (Or One Stick) very cold, and cut into small cubes
- 3 Eggs, slightly beaten
Strawberry Filling
- 2 lbs Fresh Strawberries, washed and sliced
- Juice of 1 Large Lemon
- 1 Tbs Cornstarch
- 3/4 Cup Sugar
Instructions
- Preheat oven to 350 degrees. Line a 9×13 baking dish with parchment paper allowing for overhang so you can easily lift the cooled bars out of the pan to cut
- In a large bowl, mix the flour, sugar, lemon zest, and butter with a pastry cutter until the butter is pea-sized.
- Use a hand mixer to mix in the eggs until the dough is crumbly but firm. If you have difficulty getting it to come together, I find pressing it together with my hands works well.
- Press 2/3 of the dough into the baking dish and set aside.
- Mix the strawberries, the lemon juice, the cornstarch and sugar together in a large mixing bowl.
- Spread them on top of the crust in the baking dish with a rubber spatula. Top with the remaining dough.
- Bake for 45-50 minutes until the dough is slightly golden brown. Let cool completely before cutting and enjoy!
