1/2CupUnsalted Butter (Or One Stick)very cold, and cut into small cubes
3Eggs, slightly beaten
Strawberry Filling
2lbsFresh Strawberries, washed and sliced
Juice of 1 Large Lemon
1TbsCornstarch
3/4CupSugar
Instructions
Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper allowing for overhang so you can easily lift the cooled bars out of the pan to cut
In a large bowl, mix the flour, sugar, lemon zest, and butter with a pastry cutter until the butter is pea-sized.
Use a hand mixer to mix in the eggs until the dough is crumbly but firm. If you have difficulty getting it to come together, I find pressing it together with my hands works well.
Press 2/3 of the dough into the baking dish and set aside.
Mix the strawberries, the lemon juice, the cornstarch and sugar together in a large mixing bowl.
Spread them on top of the crust in the baking dish with a rubber spatula. Top with the remaining dough.
Bake for 45-50 minutes until the dough is slightly golden brown. Let cool completely before cutting and enjoy!
Notes
These bars can be frozen in an airtight container for up to 1 month.Feel free to use any kind of fresh berries or even a mixture of fresh berries for this recipe! I especially like using fresh blueberries! Try warming it up and serving with vanilla ice cream or whipped cream for a truly decadent dessert!
