Strawberry Crumble Bars

A scrumptious strawberry dessert bar engulfed in a buttery crust that you won't be able to resist!

Ingredients

Crust/Topping

  • 3 Cups All Purpose Flour
  • 1.5 Cups Granulated Sugar
  • 1 Tsp Salt
  • 1 Large Lemon Zest
  • 1/2 Cup Unsalted Butter (Or One Stick) very cold, and cut into small cubes
  • 3 Eggs, slightly beaten

Strawberry Filling

  • 2 lbs Fresh Strawberries, washed and sliced
  • Juice of 1 Large Lemon
  • 1 Tbs Cornstarch
  • 3/4 Cup Sugar

Instructions

  • Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper allowing for overhang so you can easily lift the cooled bars out of the pan to cut
  • In a large bowl, mix the flour, sugar, lemon zest, and butter with a pastry cutter until the butter is pea-sized.
  • Use a hand mixer to mix in the eggs until the dough is crumbly but firm. If you have difficulty getting it to come together, I find pressing it together with my hands works well.
  • Press 2/3 of the dough into the baking dish and set aside.
  • Mix the strawberries, the lemon juice, the cornstarch and sugar together in a large mixing bowl.
  • Spread them on top of the crust in the baking dish with a rubber spatula. Top with the remaining dough.
  • Bake for 45-50 minutes until the dough is slightly golden brown. Let cool completely before cutting and enjoy!

Notes

These bars can be frozen in an airtight container for up to 1 month.
Feel free to use any kind of fresh berries or even a mixture of fresh berries for this recipe! I especially like using fresh blueberries! 
Try warming it up and serving with vanilla ice cream or whipped cream for a truly decadent dessert!
