I absolutely love pasta salad! And this Creamy Pasta Salad is one of my favorites! It is slightly sweet, a bit tangy and just delightful! It has shredded carrots, sliced celery, cheddar cheese and sweet peas! It may seem like an odd combination, but anyone that tries it, loves it! It is perfect to take to cookouts, luncheons, baby/wedding showers, etc. It is also perfect to meal prep and eat throughout the week. Basically, it is perfect for any occasion! I love making it for cookouts, along with some of my other favorite “cookout” foods! Like my Cowboy Baked Beans, my Grandma’s Old Fashioned Southern Style Potato Salad, and this Dr. Pepper Smoked Pulled Pork

How To Make Creamy Pasta Salad

Boil 16 oz of Rotini Pasta or any other type of short pasta that you like. Prepare until al dente according to the package directions. When it is finished, drain it and run it under cold water until it is completely cooled.

This is just a summary. The full recipe is down below! While the pasta is cooking, shred 1 large carrot, slice up 1 celery rib and cube up 8 oz of cheddar cheese.

In a large bowl, whisk together mayonnaise, sugar, white vinegar, salt and black pepper.

Add in the cooked and cooled pasta and the rest of the ingredients. Mix really well. Cover and let it sit in the fridge for at least one hour before serving.

Creamy Pasta Salad

This creamy pasta salad is made with a sweet mayo-based dressing and is loaded up with carrots, peas and cheese! A popular dish for any occasion!

Ingredients
  

  • 16 oz Rotini or any kind of short pasta that you prefer
  • 1 Large Shredded Carrot
  • 1 Celery Rib, sliced thinly
  • 8 oz Cheddar Cheese, cubed
  • 10 oz Bag of Frozen Peas, thawed
  • 1.5 cups Mayonnaise
  • 1/2 cup White Sugar
  • 1/4 cup White Vinegar
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions
 

  • Take the frozen peas out of the freezer to thaw before beginning.
  • Boil the pasta in salted water to al dente. Drain it and run it under cold water until it is completely cooled.
  • While the pasta cooks, shred the carrot, slice the celery and cube up the cheese.
  • In a large bowl, mix the mayonnaise, sugar, vinegar and salt and pepper.
  • Add in the cooked and cooled pasta and the rest of the ingredients. Mix well.
  • Cool in the fridge for at least an hour before serving and enjoy!

Notes

Cooked and cubed ham is a nice addition to this, as well as bacon and hard-boiled eggs! 
You can make this ahead of time and store in the fridge for up to 5 days. You may need to add a bit more mayonnaise as the pasta will absorb some of it. 
I do not recommend freezing it as it will change the texture too much. 
The dressing base for this is great for a lot of pasta salad recipes! Get creative and try it with a variety of different add-ins.
