This creamy pasta salad is made with a sweet mayo-based dressing and is loaded up with carrots, peas and cheese! A popular dish for any occasion!

Ingredients
16ozRotinior any kind of short pasta that you prefer
1Large Shredded Carrot
1Celery Rib, sliced thinly
8ozCheddar Cheese, cubed
10ozBag of Frozen Peas, thawed
1.5cupsMayonnaise
1/2cupWhite Sugar
1/4cup White Vinegar
1tspSalt
1tspBlack Pepper
Instructions
Take the frozen peas out of the freezer to thaw before beginning.
Boil the pasta in salted water to al dente. Drain it and run it under cold water until it is completely cooled.
While the pasta cooks, shred the carrot, slice the celery and cube up the cheese.
In a large bowl, mix the mayonnaise, sugar, vinegar and salt and pepper.
Add in the cooked and cooled pasta and the rest of the ingredients. Mix well.
Cool in the fridge for at least an hour before serving and enjoy!
Notes
Cooked and cubed ham is a nice addition to this, as well as bacon and hard-boiled eggs! You can make this ahead of time and store in the fridge for up to 5 days. You may need to add a bit more mayonnaise as the pasta will absorb some of it. I do not recommend freezing it as it will change the texture too much. The dressing base for this is great for a lot of pasta salad recipes! Get creative and try it with a variety of different add-ins.
