Crockpot Chicken Broccoli Alfredo

I have always been leery about making an alfredo sauce in the crockpot. I perfected my stovetop alfredo sauce many years ago, and it is just so easy that I have never really felt the need to make it in a slow cooker. But with our busy lifestyles, crockpot meals are also one of my favorite ways to prepare food. So I went ahead and gave it a shot and the result was melt-in-your-mouth DELICIOUS! This Crockpot Chicken and Broccoli Alfredo will definitely be a new addition to my dinner rotation! And it is such a simple recipe, I am sure you will be adding it to yours too!

Ingredients

  • Heavy Cream
  • Cream Cheese
  • Butter
  • Garlic (Use fresh unless you don’t have any, then you can use granulated)
  • Parmesan cheese (Again, please use fresh, it makes such a big difference)
  • Chicken Broth (low sodium preferred)
  • Broccoli
  • Boneless skinless chicken breasts or thighs whichever you prefer
  • 1 lb pasta (I used penne but any kind will work!)
  • Salt and Pepper

To make this Chicken Broccoli Alfredo, you will start by putting all of the ingredients except for the chicken and pasta (and 1/2 of the parmesan cheese) into the crockpot.

You will give those a good mix then add your chicken in and make sure everything is covered by the liquid. Place the lid on and cook on high for 2-3 hours or low for 4-6 hours. I ended up cooking mine on low for roughly 5 hours.

The chicken has to reach an internal temp of 165 degrees and it should be very tender and easy to shred with a fork.

When it is finished, take the chicken out and either shred it or cut it into chunks. I chose to cut mine up. At this point you should have your pasta boiling in some salted water. Cook until al dente according to the package directions.

Add the pasta in and about 1 cup of the pasta water. (This will help to thicken up the sauce.) Stir in the rest of the parmesan cheese and return the chicken to the pot.

Stir it up really well until the cheese is completely melted. Let it sit on the warm setting for about 10-15 minutes to really thicken up nicely.

This is what the end result should look like. At this point you can add salt and pepper to taste if needed.

Serve as a stand alone dish or add some freshly baked garlic bread for a complete meal!

Ingredients
  

  • 2.5 cups Heavy Cream
  • 4 oz Cream Cheese
  • 4 tbs Unsalted Butter
  • 3-4 Garlic Cloves, minced
  • 1 tbs Salt
  • 1 tbs Pepper
  • 1 Cup Chicken Broth
  • 1 Cup Freshly grated Parmesan Cheese divided in half
  • 2 Cups Broccoli, chopped
  • 1 lb Boneless skinless chicken breasts or thighs
  • 1 lb Penne Pasta

Instructions
 

  • Add the first 9 ingredients to the crockpot but reserve half of the cheese. Stir lightly
  • Place the chicken in and make sure everything is covered by the liquid
  • Cook on high 2-3 hours or low for 4-6 hours
  • When it is finished take the chicken out and cut it or shred it
  • Boil the pasta until al dente and reserve a cup of the pasta water.
  • Add the pasta and the pasta water, the other 1/2 cup of cheese and the chicken into the crockpot.
  • Stir until the cheese is completely melted.
  • Let sit on the warm setting for 10-15 minutes to really thicken up.

Notes

This dish can be frozen for up to 3 months in an airtight container. I recommend reheating it slowly in the crockpot or on the stovetop. You may need to add milk to bind the sauce.
