This cheesy smoked sausage and potatoes skillet is one of those meals my husband and I find ourselves turning to again and again. Not only is it made with inexpensive, pantry-friendly ingredients. But it’s also ready in about 30 minutes from start to finish. It’s perfect for those hectic weeknights when the last thing you want to do is overthink dinner.

Ingredients:
- 2 lbs yellow potatoes, sliced into thin rounds (skin on or peeled—your choice)
- 1 tablespoon chicken-flavored bouillon
- 1 (14 oz) package smoked sausage, sliced (I used Hillshire Farm Cajun-style andouille)
- 1 yellow onion, diced
- 1 tablespoon neutral oil (like vegetable or canola)
- 1 tsp Garlic Powder
- 1/2 tsp Black Pepper
- 2 tablespoons bacon grease
- 1 teaspoon all-purpose seasoning (I used “The Usual” by Fire & Smoke Society)
- 4 oz sharp cheddar cheese, freshly shredded
- Optional: Salt to taste (but you likely won’t need it)
Instructions:

Slice 2 lbs of yellow potatoes into thin slices. Bring a large pot of water to a boil. Stir in the chicken bouillon, then add the sliced potatoes. Boil for 5 minutes, just until slightly tender. Drain and set aside.



While the potatoes are boiling, heat 1 tablespoon of oil in a large skillet over medium heat. Add the sliced sausage and diced onion. Cook until the sausage is browned and the onions are soft and caramelized, about 6–8 minutes. Transfer to a plate and set aside.


In the same skillet, melt 2 tablespoons of bacon grease (or oil or butter). Add the drained potatoes and season with your favorite all-purpose seasoning blend. Let the potatoes cook for about 20 minutes, only stirring occasionally to allow them to get beautifully crispy and golden.

Lastly

Once the potatoes are cooked to your liking, return the sausage and onions to the skillet. Stir to combine. Sprinkle the shredded sharp cheddar evenly over the top, cover with a lid, and let the cheese melt for a few minutes.




Give it a quick taste before adding any salt—between the sausage, bouillon, and bacon grease, it’s likely seasoned enough. But if needed, adjust to your preference!



This skillet is hearty enough to stand alone, but it’s also delicious served with a simple side salad, sautéed greens, or a slice of buttered white bread. For breakfast, top it with a fried egg and thank me later.
