This dish is not just a feast for the eyes; it’s also packed with health benefits. Sweet potatoes are high in fiber, vitamins A and C, and antioxidants, making them a great choice for maintaining a healthy lifestyle. Broccoli is a nutrient powerhouse, rich in vitamins K and C, fiber, and several antioxidants. Red onions add a unique flavor and are known for their anti-inflammatory properties. The andouille sausage brings a spicy kick that perfectly complements the sweetness of the sweet potatoes and the savory vegetables, creating a harmonious balance of flavors.
Ingredients:
- 2 large sweet potatoes, peeled and cut into 2-inch cubes
- 12 ounces of broccoli florets
- 1 large red onion, chopped into large chunks
- 13 ounces of Cajun-style andouille smoked sausage, sliced
- Mrs. Dash garlic and herb seasoning blend (about 1 tablespoon)
- Honey (about 1 tablespoon for drizzling)

- 3 tablespoons of extra-virgin olive oil
- 1 teaspoon of garlic powder
- ½ teaspoon of ground cumin
- ½ teaspoon of paprika
- ½ teaspoon of chili powder
- ½ teaspoon of onion powder
- ½ teaspoon of salt and pepper
Instructions:

In a bowl, mix the sweet potato cubes with the marinade ingredients, ensuring they are well-coated. Then spread the sweet potatoes on a sheet pan and bake for 20 minutes. This step is crucial as it allows the sweet potatoes to soften before adding other ingredients.



While the sweet potatoes are baking, prepare the broccoli and red onion. Drizzle them with olive oil and season with the Mrs. Dash blend. Then slice the sausage.





After the sweet potatoes have baked for 20 minutes, add the broccoli and onion to the pan, then top with the sliced sausage.
Return the pan to the oven and bake for an additional 20 minutes.

For that extra touch, drizzle with honey and broil on high for about 5 minutes, allowing everything to crisp up nicely.
