One Pot Cheesy Taco Rice

I love tacos, and rice, and cheese, and one-pot meals! So this cheesy taco rice is on the dinner rotation A LOT! Not to mention the fact that it only takes 6 ingredients and about 20 minutes to make! Anyone who needs a quick and easy meal, this is one I highly suggest!

You will start by browning 1.5 lbs of ground beef. Once cooked, drain the grease if you prefer.

Then you will add in 2 packets of taco seasoning (or you can use your own blen if you like).

And after that, dump in a can of Rotel.

Give it a quick mix.

Now pour in 2 cups of Instant Rice and 2 cups of beef broth.

Stir that all up and let it come to a boil. Cover with the lid, remove from the heat and let it sit for 5-7 minutes, until the rice is cooked.

It’s already good enough to eat!

We are a family of cheese lovers though, so I added 1 cup each of sharp cheddar and pepper jack. I put it under the broiler until the cheese was golden brown and bubbly, about 5 minutes.

You can eat it as it is or top with any variety of toppings!

Ingredients
  

  • 1.5 lbs Ground beef or any ground meat you like
  • (2) 1 oz Packets of Taco Seasoning
  • 10 oz Can of Rotel
  • 2 Cups Instant Rice
  • 2 Cups Low Sodium Beef Broth
  • 1 Cup Sharp Cheddar Cheese, grated
  • 1 Cup Pepper Jack Cheese, Grated

Instructions
 

  • In a large skillet, brown the ground beef and drain the excess grease if preferred.
  • Add the taco seasoning and rotel and give it a quick mix.
  • Stir in the rice and beef broth and bring to a boil.
  • Put the lid on and remove from the heat and let sit for 5-7 minutes or until the rice is cooked and most of the liquid is absorbed.
  • Spread the cheese on top and place under the broiler until the cheese is golden brown and bubbly.
  • Serve as is or top with your favorite taco toppings!
