One Pot Cheesy Taco Rice

I love tacos, and rice, and cheese, and one-pot meals! So this cheesy taco rice is on the dinner rotation A LOT! Not to mention the fact that it only takes just a few simple ingredients and about 20 minutes to make! Anyone who needs a quick and easy meal, this is one I highly suggest!


You will start by browning 1.5 lbs of ground beef. Once cooked, drain the grease if you prefer.

Then add in a packet of taco seasoning or you can use your own blend if you like.

And after that, add in a can of Rotel and a can of red enchilada sauce. And give it a good mix!



Now pour in 2 cups of Instant Rice and 2 cups of beef broth. (I’ve included directions for regular rice in the recipe card below). Stir that all up and let it come to a boil. Cover with the lid, remove from the heat and let it sit for 5-7 minutes, until the rice is cooked.





Sprinkle 2 cups of shredded cheese on top. Use any kind you like, I used colby jack this time. You can either place the lid on and let it melt for a few minutes or put it in the oven under the broiler for a couple minutes. Either way is fine!

You can eat it as it is or top with any variety of toppings! I also like to use it as a dip for nacho cheese tortilla chips!

One-Pot Cheesy Taco Rice
Ingredients
- 1 lb Ground beef or any ground meat you like
- 1 Small Diced Onion
- 1 Packet of Taco Seasoning
- 10 oz Can of Rotel
- 10 oz Can of Red Enchilada Sauce
- 2 Cups Instant Rice directions for regular rice below
- 2 Cups Low Sodium Beef Broth
- 2 Cups Shredded Cheese ( I used colby jack but any kind you like is fine!)
- Any toppings you like such as sour cream, jalapenos, hot sauce etc.
Instructions
- In a large skillet, brown the ground beef and drain the excess grease if preferred.
- Add the taco seasoning, red enchilada sauce and rotel and give it a quick mix.
- Stir in the rice and beef broth and bring to a boil.
- Put the lid on and remove from the heat and let sit for 5-7 minutes or until the rice is cooked and most of the liquid is absorbed.
- Spread the cheese on top and put the lid on and let it melt for about 5 minutes or place it under the broiler until the cheese is golden brown and bubbly.
- Serve as is or top with your favorite taco toppings!

Made this using ground chicken and chicken broth. It was delicious. My husband said it was one of his new favorites. Definitely going to keep in my rotation.
