One-Pot Cheesy Taco Rice

Ingredients

  • 1 lb Ground beef or any ground meat you like
  • 1 Small Diced Onion
  • 1 Packet of Taco Seasoning
  • 10 oz Can of Rotel
  • 10 oz Can of Red Enchilada Sauce
  • 2 Cups Instant Rice directions for regular rice below
  • 2 Cups Low Sodium Beef Broth
  • 2 Cups Shredded Cheese ( I used colby jack but any kind you like is fine!)
  • Any toppings you like such as sour cream, jalapenos, hot sauce etc.

Instructions

  • In a large skillet, brown the ground beef and drain the excess grease if preferred.
  • Add the taco seasoning, red enchilada sauce and rotel and give it a quick mix.
  • Stir in the rice and beef broth and bring to a boil.
  • Put the lid on and remove from the heat and let sit for 5-7 minutes or until the rice is cooked and most of the liquid is absorbed.
  • Spread the cheese on top and put the lid on and let it melt for about 5 minutes or place it under the broiler until the cheese is golden brown and bubbly.
  • Serve as is or top with your favorite taco toppings!

Notes

If you prefer to use regular uncooked rice, use 1.5 cups of rice and 3 cups of broth. You will need to bring it to a boil, then reduce the heat. Put the lid on and let it cook for approximately 15-20 minutes!
