Ingredients

  • 2 Large Sweet Potatoes, peeled and cut into 2 inch cubes
  • 12 oz Broccoli Florets
  • 1 Large Red Onion, quartered and peeled
  • 13 oz Cajun Style Andouille Sausage, sliced
  • 1 tbsp Mrs Dash Garlic and Herb Blend
  • Honey, Optional for Drizzling, about 1 tbsp

For the Marinade

  • 3 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Chili Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp each Salt and Pepper

Instructions

  •  Preheat your oven to 425°F (220°C).
  • In a bowl, mix the sweet potato cubes with the marinade ingredients, ensuring they are well-coated. Spread the sweet potatoes on a sheet pan and bake for 20 minutes. This step is crucial as it allows the sweet potatoes to soften before adding other ingredients.
  • While the sweet potatoes are baking, prepare the broccoli and red onion. Drizzle them with olive oil and season with the Mrs. Dash blend.
  • After the sweet potatoes have baked for 20 minutes, add the broccoli and onion to the pan, then top with the sliced sausage.
  •  Return the pan to the oven and bake for an additional 20 minutes.
  • For that extra touch, drizzle with honey and broil on high for about 5 minutes, allowing everything to crisp up nicely.

Notes

Feel free to substitute the vegetables based on your preferences—zucchini, bell peppers, asparagus, or even Brussels sprouts can work wonderfully. 
If you do not care for spicy foods, there are plenty of options for smoked sausage that are not spicy! 
Store leftovers in the fridge for up to 3 days.
