Crockpot Breakfast Casserole

This Crockpot Breakfast Casserole is perfect for the Holidays when you will be having overnight guests but is also a great way to meal prep. It is also a perfect weekend family breakfast when you know you will be busy and it is so nice to have breakfast waiting for you right when you wake up. this recipe is extremely versatile and can be modified in a number of ways to suit your family’s tastes! This is how we like ours.

This recipe uses frozen hash browns. You will need a 32 oz bag. Any type of hash browns will work.

Start by either lining your crockpot with a liner made specifically for crockpots or spray it with cooking spray. Dump half the bag of potatoes in.

Season with salt and pepper and sprinkle on any veggies you might like. I used a red onion and a green bell pepper. If you have picky eaters that won’t eat vegetables, it will be fine to leave them out completely.

Now spread on 1/2 lb of cooked breakfast sausage. (I have never used uncooked sausage before so I cannot say for sure if that would work.) You can also add any other types of meat you want. the sky really is the limit with ways to modify this.

Now add 1 cup of shredded cheddar cheese.

Repeat those layers, being sure to season the potatoes.

In a large bowl, mix together 12 eggs with 1 cup of milk.

Season with some salt and pepper, and if you like a little spice, add some cajun seasoning.

Whisk together well.

Pour over the top of the ingredients in the crockpot. DO NOT STIR!

Place the lid on and cook on low for 6-8 hours or high for 3-4. All crockpots vary so cooking time may need to be adjusted.

And this is what your finished product will look like!

Your guests can simply help themselves to a nice, hot breakfast!

I like to set out some fruit, and some bread for everyone to make toast if they want. This is such a wonderful and tasty dish and your guests will be so grateful!

Ingredients
  

  • 32 oz Bag of Frozen Hash Browns
  • 1/2 Green Bell Pepper, Diced
  • 1/2 Red Onion, Diced
  • 1 lb Breakfast Sausage, cooked
  • 2 Cups Grated Sharp Cheddar Cheese
  • 12 Eggs
  • 1 Cup Milk

Seasonings

  • Salt and Pepper and Cajun Seasoning if desired

Instructions
 

  • Line your crockpot with a crockpot liner, or spray with cooking spray. Add half of the hash browns to the bottom. Season with salt and pepper. I do not measure, but it's best to under season as you can always add more.
  • Add 1/2 of the veggies. You can omit these, or you can use different ones or even use more!
  • Add 1/2 of the cooked sausage.
  • Add 1 cup of the cheese.
  • Repeat these layers, making sure to season the potatoes again.
  • Mix together the eggs with the milk and season with salt and pepper and the cajun seasoning if you like. Pour over the top of the ingredients in the crockpot. Do not stir!
  • Place the lid on and cook on low for 6-8 hours or on high for 3-4 hours. (*All crockpots are different so cooking times may vary!)

Notes

This recipe is EXTREMELY versatile and customizable! You can use a variety of meats, vegetables, seasonings and cheeses! I make it different almost every time I make it. 
It’s great with country gravy added on the top or with cut up canned biscuits mixed in. There really are no rules when making this! Just use YOUR favorite breakfast foods and it will turn out great.
What makes this so great, is that you can just dump everything in the night before and you can enjoy your morning without having to fuss over breakfast!
