Line your crockpot with a crockpot liner, or spray with cooking spray. Add half of the hash browns to the bottom. Season with salt and pepper. I do not measure, but it's best to under season as you can always add more.
Add 1/2 of the veggies. You can omit these, or you can use different ones or even use more!
Add 1/2 of the cooked sausage.
Add 1 cup of the cheese.
Repeat these layers, making sure to season the potatoes again.
Mix together the eggs with the milk and season with salt and pepper and the cajun seasoning if you like. Pour over the top of the ingredients in the crockpot. Do not stir!
Place the lid on and cook on low for 6-8 hours or on high for 3-4 hours. (*All crockpots are different so cooking times may vary!)
