Crockpot Breakfast Casserole

Ingredients

  • 32 oz Bag of Frozen Hash Browns
  • 1/2 Green Bell Pepper, Diced
  • 1/2 Red Onion, Diced
  • 1 lb Breakfast Sausage, cooked
  • 2 Cups Grated Sharp Cheddar Cheese
  • 12 Eggs
  • 1 Cup Milk

Seasonings

  • Salt and Pepper and Cajun Seasoning if desired

Instructions

  • Line your crockpot with a crockpot liner, or spray with cooking spray. Add half of the hash browns to the bottom. Season with salt and pepper. I do not measure, but it's best to under season as you can always add more.
  • Add 1/2 of the veggies. You can omit these, or you can use different ones or even use more!
  • Add 1/2 of the cooked sausage.
  • Add 1 cup of the cheese.
  • Repeat these layers, making sure to season the potatoes again.
  • Mix together the eggs with the milk and season with salt and pepper and the cajun seasoning if you like. Pour over the top of the ingredients in the crockpot. Do not stir!
  • Place the lid on and cook on low for 6-8 hours or on high for 3-4 hours. (*All crockpots are different so cooking times may vary!)

Notes

This recipe is EXTREMELY versatile and customizable! You can use a variety of meats, vegetables, seasonings and cheeses! I make it different almost every time I make it. 
It's great with country gravy added on the top or with cut up canned biscuits mixed in. There really are no rules when making this! Just use YOUR favorite breakfast foods and it will turn out great.
What makes this so great, is that you can just dump everything in the night before and you can enjoy your morning without having to fuss over breakfast!
