Cheesy Bacon and Corn Dip

Ingredients

  • 8 oz Cream Cheese, softened
  • 1 Cup Shredded Sharp Cheddar Cheese divided in half
  • 1 Cup Shredded Pepper Jack Cheese divided in half
  • 1/2 Cup Sour Cream
  • 1/4 Cup Mayonnaise
  • 2 tbsp Horseradish Mustard
  • 4 oz Can of Diced Jalapenos
  • 1 tsp each Garlic Powder and Onion Powder
  • 1/2 - 1 tsp Slap Ya Mama Cajun Seasoning (or any cajun seasoning)
  • 15 oz Can of Sweet Corn, drained
  • 1 lb Cooked, Crumbled Bacon divided in half
  • 2 tbsp Sliced Green Onions

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, mix cream cheese, shredded cheeses, sour cream, mayo, mustard, jalapeños, and seasonings with a hand mixer.
  • Stir in corn and ½ lb of bacon. Spread into a 9-inch pie pan or 9x9 baking dish.
  • Top with remaining cheese. Bake for 25 minutes or until golden and bubbly.
    Top with remaining bacon and green onions.
  • Serve hot with chips, crackers, pretzels, or veggie sticks!

Notes

• Want extra kick? Add a few dashes of hot sauce or a sprinkle of cayenne pepper.
• Make it ahead: You can mix the dip in advance, refrigerate, and microwave it before serving.
• Fire-roasted corn twist: Swap the sweet corn for fire-roasted corn for a smokier flavor.
