Jalapeno Popper Dip

This Jalapeno Popper Dip is one of my most requested appetizer recipes, second to my Baked Crack Chicken Dip. And for very good reason! It is an amazing mixture of flavors and soooooo much easier than making individual jalapeno poppers. And it can be made in advance up to 2 days and put in the oven the day of. Converting it to a slow cooker is also very easy. Nothing will change, just throw everything together and let it cook on low for about 1-2 hours stirring occasionally. I promise that if you make this recipe for a party, everyone will ask for the recipe. So here it is!

How to Make Jalapeno Popper Dip

In a large bowl, mix together one block of softened cream cheese. (If you forget to let it soften beforehand, you can throw it in the microwave. Since we are baking this, it will not hurt it in any way.) Add in 1 cup of sour cream. You can substitute with plain Greek yogurt if you like. Add a can of diced chilies and 2 diced fresh jalapenos. You can reduce the spiciness by using diced chilies and by removing the seeds and membranes from the fresh jalapenos.

Add in 2 cups of sharp cheddar cheese and 1 cup pepper jack. And you can’t leave out the bacon! Put in 1 lb of cooked, crumbled bacon (I leave about 1 tbsp out to garnish the top with when it is done. A shortcut would be to buy the precooked bacon. Finally, add in 1 packet of Ranch dressing seasoning mix.

Stir that all together really well and spread into a greased baking dish. I recommend an 8X8, or a 9 inch pie plate. A 9×13 will work if that is all you have.

Bake at 350 degrees for about 30-35 minutes or until the cheese is golden brown and bubbly! Garnish with the extra bacon and some diced green onions. Serve with anything you like for dipping! I prefer Ritz crackers or Tostitos scoops, but anything will work!
