There are certain recipes that don’t just feed your family — they become part of your holidays. This biscuits and gravy casserole is one of those recipes for us. I’ve been making it every single Christmas morning for many years, and it’s one of those dishes everyone expects to see when they wake up.

What I love most is how relaxed it makes the morning. Everything is assembled the night before, tucked into the fridge, and then all you have to do is pop it in the oven while gifts are being opened. No one’s hovering in the kitchen hungry — everyone just helps themselves when they’re ready. Cozy, comforting, and completely stress-free… that’s how Christmas morning should be.

Ingredients You’ll Need

  • Breakfast sausage (1 pound)-This is the base of the flavor. Use your favorite pork breakfast sausage.
  • Butter (2 tablespoons)-Adds richness and helps form the gravy roux.
  • All-purpose flour (¼ cup)-Thickens the gravy and gives it that classic sausage gravy texture.
  • Half-and-half (2 cups)-Creates a rich, creamy gravy. The gravy will be thick — that’s exactly what you want.
  • Seasonings
    • Slap Ya Mama Cajun seasoning (½ teaspoon, optional)
    • Black pepper (about 1 teaspoon)
    • Pinch of red pepper flakes
    Note: Slap Ya Mama does add a kick. You can absolutely substitute salt and black pepper if you prefer a milder version, especially for kids.
  • Pillsbury Grands Southern Homestyle Biscuits (8-count package)-Cutting these into small pieces is the key to fully cooked biscuits.
  • Eggs (6 large)-These help bind everything together and make it casserole-style.
  • Milk (⅛ cup)-Lightens the egg mixture slightly.
  • Cheese- (3 cups total, freshly shredded)
    • 1 1/2 cup sharp cheddar1 1/2 cup pepper jack
    Other great options: Colby Jack, Monterey Jack, mild cheddar, or a cheddar blend.Stick with good melting cheeses for best results.

How to Make Biscuits and Gravy Casserole

Start by heating a skillet over medium heat. Brown the breakfast sausage until fully cooked, breaking it up as it cooks. Once done, remove about half of the sausage from the pan and set it aside — this will be layered into the casserole later.

To the remaining sausage in the skillet, add the butter. Once melted, sprinkle in the flour and stir well. Let the flour cook for at least three minutes, stirring often. This step is important to remove the raw flour taste.

Slowly pour in the half-and-half, about ½ cup at a time, stirring constantly. The gravy will be very thick at first — that’s exactly what you want. Continue stirring until smooth and creamy.

Season the gravy with Slap Ya Mama (if using), black pepper, and a pinch of red pepper flakes. Once thickened, remove from the heat and set aside to cool slightly.

Cut each biscuit into nine small pieces. This smaller size is what ensures the biscuits cook completely in the casserole.

In a bowl, whisk together the eggs, milk, and about ½ teaspoon of Slap Ya Mama (or salt and pepper if substituting).

Grease a 9×13 baking dish. Add the cut biscuits evenly across the bottom, followed by the reserved cooked sausage. Sprinkle with 2 cups of shredded cheese.

Pour the egg mixture evenly over everything, then gently spoon the sausage gravy over the top. Finish with the remaining 1 cup of cheese.

Bake uncovered at 350°F for 35–40 minutes, or until the eggs are puffed, the center is set, and the biscuits are cooked through.

I like to serve this with a side of fresh fruit and hashbrowns. And for those who like a little extra kick, Cholula hot sauce is a must at our table.

Tips for Success

  • Cut the biscuits into small pieces — not quarters. This makes all the difference.
  • Use freshly shredded cheese for better melting.
  • If the top starts browning too quickly, loosely tent with foil.
  • If your gravy gets a little too thick, just add a few splashes of milk or half and half to it.

Ingredients
  

  • 1 lb Breakfast Sausage
  • 2 tbsp Salted Butter
  • 1/4 Cup All Purpose Flour
  • 2 Cups Half and Half
  • 1/2 tsp Slap Ya Mama Cajun Seasoning optional
  • 1 tsp Red Pepper Flakes
  • 8 Count Pillsbury Grands Southern Homestyle Biscuits or any brand that you like
  • 6 Large Eggs
  • 1/4 tsp Slap Ya Mama or salt to season the eggs
  • 1/8 Cup Milk
  • 1.5 Cups Shredded Cheddar Cheese
  • 1.5 Cups Shredded Pepper Jack Cheese

Instructions
 

  • Brown sausage over medium heat. Remove half and set aside.
  • Add butter to remaining sausage, then stir in the flour and cook 3 minutes to cook out the raw flour taste.
  • Slowly whisk in half-and-half until thick and smooth. Season with the Slap Ya Mama, black pepper and red pepper flakes. (If you don't want to use the Slap Ya Mama, use salt instead)
  • Cut biscuits into nine pieces each.
  • Whisk eggs, milk, and seasoning together.
  • Layer biscuits, reserved sausage, and 2 cups cheese in a greased 9×13 dish.
  • Pour egg mixture over top, then spoon gravy on and finish with remaining cheese.
  • Bake uncovered at 350°F for 35–40 minutes until set and cooked through.

Notes

Make-Ahead Instructions (Christmas Morning Friendly!)

This casserole is perfect for prepping the night before.
After assembling, make sure the sausage gravy has cooled, then cover the dish tightly and refrigerate overnight. In the morning, let the casserole sit out for about 1 hour before baking. This helps take the chill off the glass baking dish and allows it to bake evenly.
Bake as directed — 35–40 minutes is usually perfect, even when made ahead.
